The Two Best Bits

Now that you got yourself all caught up, I have even more to share with you from the weekend. I did good on Saturday morning. I achieved a new PDR and then followed it up with a pancake creation that I still have dreams over. First, let’s start with the run.
Nine miles. NINE. MILES! I strangely love long runs and couldn’t wait to go out and tackle the distance. I decided to go with the running path for this week’s run and made the trek out as early as possible. I really appreciate having such a great running path to use for long runs. It motivates me to come across so many other people out caring for their health and I like not having to worry about as many crosswalks and bug attacks. I also like knowing I can easily reach one of these when needed…
Yea. That is a welcome sight for someone who ate too much fiber. But I would have no idea who that could be. Purely hypothetical and we’ll leave it at that. 😉
Despite that quick break in the run, things went incredibly well. Nine miles with an average 9:18 pace ain’t half bad I would say.
What a way to start the weekend!
After taking care of my legs with some stretching and icing, I had to get to work taking care of my stomach. Last week, Gabriela posted about her love for the chocolate and coconut combination. That sparked an urge in me. I needed a chocolate and coconut flavor explosion. I needed these Chocolate Coconut Pancakes. Oh, yes. I did. And I think you need them too.
Chocolate Coconut Pancakes
- 1 1/4 cups flour (I used whole wheat pastry flour)
- 2 tablespoons cocoa powder
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsweetened chocolate almond milk
- 1/4 cup light coconut milk
- 2 tablespoons canola oil (or applesauce)
- 1 large egg
- desired amount of shredded coconut
Mix the dry ingredients – flour through salt – together in a large mixing bowl.
Make a well in the center to add the wet ingredients – almond milk through egg. Stir until the mixture forms a well-blended batter. Fold in your desired amount of shredded coconut. I used one large handful.
Spoon batter onto a lightly greased, hot griddle or pan. Cook 2-3 minutes until small bubbles form and edges set. Flip and cook another 2-3 minutes.
Plate and garnish with extra cocoa powder, shredded coconut, or powdered sugar. Go mmmmmmm.
These babies make me giddy. Promise to make some? Because I’m out and need more. Like, stat pleaseandthankyou.

Nope. 9 1/2 next weekend I think. I will hit 10 labor day weekend based on my plan. And I’m planning a trip to Flying Biscuit for afterwards. LOL
I am definitely a coconut lover but not so much on the chocolate thing. Great job on the 9 miles!

The best part of my weekend was staying in, watching the Braves game and baking cookies with my boyfriend. So simple but so much fun.

Best part of my weekend: Running a 4K with Jason, then spending the whole afternoon helping a friend prepare for a garage sale — I love sorting through stuff, etc.
My favorte part of this weekend: the nothingness. I did nothing but sit in candlelight, watching mad men, and then an afternoon baking with my mom!

I LOVE LOVE LOVE chocolate and coconut together. I’m actually NOT a chocolate lover or a coconut lover, but together they make sweet, beautiful music. My favorite coffee stars both 🙂
My favorite part of the weekend was running 18 miles (I love my long runs too!) and spending time with my family at the pool. Yesterday was just a great day. Hope you have a great week!
I don’t know how much I would love 18 miles (haha) but glad you did! And so odd you don’t care for chocolate or coconut much apart but do together. They do make a great combo!

The best part of my weekend was hanging out with my boyfriend. With our busy summer schedules, it felt like it had been forever since the two of us had time to ourselves.
Yes I do need those pancakes. I’m an Almond Joy fanatic, so chocolate and coconut is my thing yet I’ve never converted it into a pancake. & congrats on your awesome run!

Congrats on the 9 miles! My sister LOVED long runs while training for the half marathon – it was her “me-time” away from the non-stop responsibilities of being a mom. She’s pregnant with her 3rd baby right now, so no more long runs for a while. 🙂
I’m not a big fan of coconut. It’s a texture thing. I like the flavor, though.
I’m not a huge fan of coconut, but I do love pretty much anything paired with chocolate! I would definitely give these a try.

Sometimes I like coconut…it just depends on what it’s paired with….and if paired with chocolate like you did I think I’d love them!

I remember the first time I ran 9 miles – about 6 months ago. It was awesome. I went to the Indian buffet after and made up for lost calories 🙂

Mmmm! I think I need these too. HECK YES I am a fan of coconut! Best part of my weekend? It’s a tie between Friday night girls’ date of Costco and tv watching or Saturday night sleepover with cousins (but both included DVDs of Boy Meets World, always a good thing).
I would so love to watch Boy Meets World again! I miss shows like that.
Look at you getting all fancy with using a real bathroom on a long run. 🙂 Around here, the cornfields are you best bet for relieving yourself of excess “fiber”.

I used to hate coconut, but as I’ve grown up I’ve become such a convert. I’m obsessed. Those pancakes sound AMAZING. I’ll definitely have to try them at some point.

Thanks so much for posting the recipe! Actually, it looks very similar to the recipe I already use for chocolate pancakes, just add coconut and sub in some coconut milk for the almond milk. 🙂
