Gooey, chewey, pea-y cookies

Since I know I like to take the time to skim through things I missed over the weekend (and I secretly hope you do too), I will leave you with an easy reading post this morning. A recipe adapted from the Deceptively Delicious cookbook. Enjoy!

White Chocolate Macadamia Cookies (adapted from Deceptively Delicious’ Chocolate Chip Cookies)

  • 1c firmly packed light brown sugar
  • 3/4c soft butter or margarine spread (I used Brummel & Brown with Yogurt)
  • 2 large egg whites
  • 1 15oz can chick peas, drained and rinsed
  • 12 oz white chocolate chips
  • 3/4c macadamia nuts
  • 2 cups flour (I used a mix of all purpose and whole wheat pastry flours)
  • 1/2 c old fashioned oats
  • 1 tsp baking soda
  • 1/4 tsp salt

1. Preheat the oven to 350 F and coat baking sheet with nonstick cooking spray.

2. In a large mixing bowl, beat the sugar and margarine together with a large spoon until smooth.

3. Beat in the two egg whites.

4. Use a food chopper to chop/grind the chickpeas until even consistency. Add the chickpeas, white chocolate chips, and nuts to the sugar/margarine combination and mix well.

5. Add the flour, oats, baking soda, and salt and mix until a thick dough forms.

6. Drop the dough by the spoonful on the baking sheet. Flatten slightly with a fork. Be sure they are spread evenly about 2 inches apart. Bake for 12 minutes until a golden brown.

7. Cool and then either eat or store in an airtight container.

How were they? GREAT! When they first came out of the oven they were gooey and delicious. I’m actually sad that suddenly the next day they grossed me out and I couldn’t stomach them. That’s no fault of their own. Purely the joys of pregnancy and sudden food aversions. Peter is still eating them up though and I have to find another sweet treat for the week.

    The best healthified dessert I have tried (so far) is Angela (from ohsheglows.com)’s Raw Vegan Coconut Brownie Bites. (The recipe can be found here: http://www.katheats.com/angela-oh-she-glows/.) Sometimes I take them to get-togethers and nobody knows they’re full of good-for-you ingredients unless I tell them!

    Those look AMAZING. White chocolate is my absolute favorite, so of course I’m drooling over here. Second favorite is milk, and third is dark – of course it would be that the chocolate that is the best for you is my least favorite!

  11. These look incredible!! I love that you used chickpeas in them- definitely need to try it out! I’m a dark chocolate girl, but I don’t hate on chocolate in any way, shape or form- I’ll eat it all!

    Wow these look so great! I’ve made brownies before that were 88 calories a square. They tasted good too! I’ve got a cake recipe that I’ve been working on that I hope to try soon. Maybe I’ll make that a vlog. Wouldn’t that be funny though if it turned out bad. Oh well, it’s all caught on camera!

    I’ve had cookies made with chickpeas and I was so surprised that they were actually really tasty! I had no idea until then that you could make baked goods with them. I like healthifying pies and making them without the crust.

    I luuuurve the look of those cookies! I’ve been having tons of fun sneaking healthy things into what I feed my step-siblings while at home. I bet they’d be appropriately shocked and disgusted by this one 😉

    The best “healthified” dessert I ever made was on my birthday. I made a red velvet cake, except instead of adding red food colouring, I added pureed beets. It turned out wonderfully! And I think the beets really added an extra level of sweetness and texture to the whole thing.

    I do not discriminate when it comes to chocolate. Different times call for different flavours.
