Finally home. Today took me through the wringer. Sleep eluded me last night, then I faced a busy day today. This morning consisted of the usual class leading and worship service. After church, my mom & I headed to my friend’s recipe bridal shower for the afternoon. I loved the decorations, the food, and the cucumber water.

The shower was surprisingly very nice and I loved spending time with my friend. If you’ve been reading my blog the past couple months you likely remember that there has been some strain between the two of us. Today felt much more natural and like the old days. I loved it! I’m really trying to take the positive view – that she is tired and stressed from wedding planning – and that things will get better after the wedding. I will just have to be open to whatever path this friendship takes. I have so many other wonderful relationships in my life that I don’t depend on it, but having an old friend in your life always feels special. And it would hurt to lose her.

This coming weekend, my turn to throw a shower arrives. I am hosting the lingerie shower that coincides with her bachelorette party. I will only be serving appetizers and desserts since it is a later shower (8 pm) and need items that are 1) easy to prepare with my busy schedule and 2) transportable since the shower is at a condo over an hour away from me. I have a few ideas I already plan on doing, but need one more dessert and one more appetizer/dip idea. And that’s where you come in…

    I just posted a no-bake cheesecake recipe on my blog tonight! It has a couple variations so you could pick one that suits your preferences. It is also pretty easy to make, and is best made in advance so you won’t have to rush around the day of.

    It should hold up okay during transport, but would work best in a cooler so it might not be ideal I suppose, unless you have a cooler you could use.

  2. I’m so happy you are making amends with your friend. It might be tough, but old friends are still some of the best. Hopefully, after the wedding, things will go back to normal and you can patch things up for good. But if not, then you will just know that you earnestly tried. Best of luck with the shower…no recipe ideas here :/

    P.S. The Self Love Challenge could not be at a more perfect time for me than right now…I can’t wait for it to start.

      I can’t wait for it either. I actually thought this week would be the start but then realized we have to wait another week. 🙁

      That’s how I’m starting to feel. I know I can do my best in the friendship and that’s all. We’ll see what happens.

  3. so glad you had a better time with your friend today. That’s great news. Maybe she’s just been super stressed… I have a recipe for Artichoke Bites (sort of like crustless quiche) that I make in mini-muffin tins. You can make ahead and then heat up. If you’re interested, let me know. Then of course there are always dips you could make ahead and serve with pita.

    I love cucumber water! My gym has jugs full of water and puts different fruits in it every day. The best I have had so far is grapefruit, so tasty! They have also done apples, kiwi, watermelon, I just love it!

    As for recipe idea I can’t really think of anything, especially since it’s going to be so far away!! It sounds like you are in good shape though and I’m sure someone will have an awesome idea for you!

    Awwwwwww, lunch with you was most definitely my favorite part of the weekend too!! 🙂

    An easy dessert idea that’s cute too is to line a pan with pretzel (you want to get the waffle shape) and put a hug on top of each one. Put them in the oven and just let them melt and then take them out of the oven and stick an M&M on each one.     Cucumber water is the best…I had it for the first time a few years ago at Burke Williams and now I want to get another massage just so I can have more of their water!

    I made date muffins for my friend’s shower a couple of months ago. They are so easy and impressive, and they were a hit! I have the recipe on my blog if you are interested!

    Cucumber water sounds delicious! Can’t wait to try it out.

    If you have access to an oven at the shower then these are a great appetizer. I’ve made them for many showers / Christmas parties I’ve thrown. Just make a few days ahead, wrap in tinfoil and either freeze or store in the fridge.

    Yay, I’m so glad that today went well. It does look like it was a really nice shower.

    Cookie pizzas are always an easy dessert option – you can use the Tollhouse rolls and just spread them flat on a pizza pan. I love adding chocolate chips and peanut butter as melty frosting once the cookie is baked.

    Another idea for dessert (Emily above me recommended cookie pizzas) — is to make a fruit pizza. Bake a big sugar cookie, make the “sauce” out of soft cream cheese and sugar, and then use sliced strawberries, blueberries and mandarin oranges as the toppings.

      I’m doing a veggie pizza thing similar to this (just not sugary ;))…so maybe having a fruit pizza would compliment it nicely. I’m getting so many ideas!

  11. what kind of dessert do you need? my god, i have about 50 in my recipes tab, almost all are GF and vegan but don’t taste like it 🙂

  12. I am happy to hear that you and your friend reconnected like old times, that’s wonderful. I have been through that with my cousin, who is like a sister/ best friend…but we are so much alike that we have butted heads and had some strain over the years.She’s getting married, and I am her matron of honor, and it’s brought us closer together, and it feels like old times, so easy 🙂

    The shower looks beautiful!!! Averie does have fabulous desserts too!!

    I love the idea of macaroons or little cookies. For my girlfriends shower last year I made beautiful cupcakes and a fresh fruit and berry spread. I made a cupcake tower so it looked like a cake..so cute!! Good luck!

      I love cupcake towers. My friend and I planned on doing one for a baby shower we hosted, but it got cancelled from the baby arriving early. I don’t think that would transport too well though which is a bummer. Little cookies might be good though. I know I’m going to need nibbly food…especially to leave for after they all drink at the bars and come home. LOL

  13. he he he- I’m doing the desserts for an upcoming baby shower- so I’m right there with ya!

    For desserts, why don’t you try Bakerella’s cake balls? They’re so easy. You just make a cake (even do a box cake if you like), crumble it, mix in icing, make them into balls, and dip into melted candy coating. They’re one of the things I’m making for the baby shower because they’re bite sized and easy to serve.

      We are doing those for M’s bday party!! And putting them on sticks to look like balloons. 🙂 LOL For this one I’m actually doing Oreo truffles bec my friend loves them. Love all those balls. Hehehe.

    Ok so here is a recipe for a dip, but it isnt all that healthy although you could change it to make it healthier.

    BLT Dip:

    1 cup mayo
    1 cup sour cream
    1 pound bacon
    2 large ripe tomatoes.

    Cook bacon and crush into small pieces and press all grease out. Chop tomatoes into small square pices. Combine everything. Serve with crackers or bread…it really tastes like a BLT and is a hit every time!

I remember you talking about how you felt as though you’d drifted away from each other but it’s great hearing that things feel a little more normal now. All the food and arrangements look so pretty!!       Okay I just may have to do that! Because c’mon…it is a lingerie shower after all. So it fits the theme. I can have balls (Oreo truffles) + the sensual choc covered berry. 😀

      It’s really refreshing. Only a hint of a cucumber taste. You would have to like cucumber to like it though.

    I always make fruit salsa for parties and people love it. There are so many variations, too. You just have to chop up some colorful fruit, add some fruit preserves and honey, chill and serve. It pairs perfectly with cinnamon sugar pita chips. Have fun with the shower plans!

    I agree about the cakeballs on bakerellas site, someone else made them for a party and they were so good and easy to transport.

    The last party I hosted I did spinach and artichoke dip. I tend to use allrecipes to find new stuff to make.

    You never cease to amaze me. What a beautiful shower and what a great friend you are. She’ll definitely look back fondly on this time.

    One of the easiest recipes we always made for a shower was a Ranch Ball, sounds bad, but if you use one block of low fat Philadelphia Cream Cheese you’re good. Mix that with a packet of Hidden Valley Ranch Dip mix (dry powder) and once you have a firm ball, sprinkle cayenne pepper on top for extra kick. It’s great with chips, no bake and no fuss!
