pumpkin stuffed french toast

I would like to start this post with a moment of silent appreciation for the weekend. Better yet? I want to scream from the rooftops I LOVE THE WEEKEND!!! You all seem pretty discerning. Can you tell I’m in a great mood today? How could I not be? I truly love my life. Sure, some days downright stink. Yea, I get excited about future possibilities. And alright, things may not be super exciting in these parts with lots of crazy adventures. But I love my life!

Please don’t be scared away…I have a special breakfast to share with you. Pumpkin Stuffed French Toast. Not only Pumpkin Stuffed French Toast…but Pumpkin Stuffed French Toast with a “baked” apple topping. And you know my style so you know this was incredibly easy. I told you you would want to stick around despite my annoyingly peppy opening paragraph. 😀

This morning, after sleeping in until after 7 am (another glorious thing about weekends), I plodded downstairs in my pajamas to make breakfast for my family. Not just any breakfast. But the. best. breakfast. ever. made. in. this. house. EVER! That may not be saying much since my “cooking” is pretty limited. Either way, this is good. Really, really good.

It all started with two spoonfuls of pumpkin, one tablespoon of maple almond butter, and a couple dashes of pumpkin pie spice. Of course slathered between two slices of hearty whole wheat bread.

While waiting for the griddle to heat up I got a sudden stroke of inspiration to do the apple topping. I didn’t have time to bake apples or cook them stovetop. I wanted my apple topping. To the microwave I go! In a microwave safe dish I put one peeled, cored, and chopped apple, 1 teaspoon brown sugar, a dash of cinnamon, and a few tiny drops of butter.

I nuked this mixture for 2 1/2 minutes, stirring once, while my stuffed french toast cooked. So, back to the toast. I dipped both sides of the sandwich in an egg, milk, pumpkin pie spice mixture before placing it on the griddle and cooking for about 2 minutes per side, until slightly browned. Then, plop the sandwich on a plate. Cover with the apple mixture. Voila!

I tasted this like Giada de Laurentiis does on her shows. Mmmmm….ohhhh…Does anyone else get slightly uncomfortable watching her taste food?

Well, I don’t really. I do always kind of snicker though because she seems a little too into it, if you catch my drift. Then again, all her food likely tastes better than this and I know I couldn’t help myself this morning. I will no longer snicker, Giada. I fully understand now.

Would you believe me if I said the morning only got better after that? Peter took M with him to run some errands so I had peace and quiet for a few hours. I think I could hear the angels singing. No? That’s just me actually able to hear myself think? Darn. The angel thing would have been cool.

Then, after they got home, we headed out for a walk all together in this stunning weather God has been giving us here.

And now, the rest of the day…a day of family fun at the fair!!! I cannot wait!!

    I know what you mean… Giada sometimes gets REALLY into it… and almost too quickly after food gets in her mouth, like really? Have you even tasted it yet?? No. 😉 RIght now The Neelys are on… and while they are fun to watch, they sometimes are over the top – get a room, you two! 😉

    That french toast?? I want that. Looks perfect!

    hahhaha, I TOTALLY know what your talking about when Giada does that. She makes that one noise “”mmmmm” and its like really deep. Its really annoying, I dont know how to explain it haha! Im glad someone else noticed that! =)

  6. That is so funny you said that about Giada. I was JUST thinking that yesterday when watching her. She ate some chicken thing and was moaning like a pornstar. Maybe she took the wrong acting class or something…

    I don’t like watching Giada at all … not because she’s so into her food, but because I don’t believe she really is that into her food. How can she actually eat the things she makes when she looks like that?

    I don’t watch the Food network anymore. For some reason, everytime I turn it on, that guy that eats all the food (Man vs. Food?) is on and watching people eat large amounts of food like that upsets me 🙁

      Glad I could help you smile. And know how much your Papa would want you to be smiling. I bet he loved your smile. 🙂 Although of course tears are good to get out too. It can be so refreshing to let out a good cry now and again.

    Oh my lanta that looks so delicious!! I went on a pumpkin spree yesterday and used a whole can to bake 2 mini loaves and some granola. Oops lol. I can’t help it!! The weather is still 80 here, so I guess I am hoping with my baking it will summon fall to come quicker!! 🙂

  22. Now that you mention it, I have noticed Giada doing that! I get annoyed with her because my husband seems to enjoy her show a little too much *ahem* and she always finds ways to put an Italian accent on foods like “ricotta.” I get that she’s Italian, she doesn’t need to remind us with every other word!

      Haha! I know what you mean about how she pronounces things. Peter & I like watching Chopped and one of the judges on there is of Mexican heritage. He always does the same thing. He’ll be speaking with a normal accent and then suddenly say tor-TEE-ya with a really strong hispanic one and a higher pitch. Dude, we get it. You don’t have to change how you speak with every word.

    I love giada 🙂 I believe the reason why she stays so tiny is because she keeps everything within reason- her portions are tiny and she can enjoy everything. Thats what I think! If thats her way than more power to her. I do the same sounds when food comes out great, you just cant prevent the true expressions! hahah

      I love Giada too! I think she is the main host on the food network I really enjoy. I just always giggle at her when she tastes food. I agree that she likely stays small because she’s only taking tastes of those foods. I bet she eats a very balanced and healthy diet overall. How could she not with making so much great food like that with such quality ingredients?
