Summer-Style Salad & Help Me Pick!

Posted: April 8, 2011 at 8:25 am

Lots of rest really does wonders on recovering from illness. I took it easy yesterday while Peter worked from home to help with the kids. I don’t quite know what hit me, but I’m happy to report it seems to have only lasted 24 hours. I think having my appetite back excites me the most. I could only stomach the following yesterday during the day:

A Yogurt Bowl

yogurtbowl3

2 Dippy Eggs, English Muffin, Grapes

eggsmuffinlunch

Banana Soft Serve with a Drizzle of White Chocolate Peanut Butter

pbbananasoftserve

All delicious, but not quite the norm for how much I typically eat in a day. Luckily, once dinner rolled around I had worked up the desire for food again. We had quite the delicious meal planned and I was thrilled to partake!

We, and by “we” I mean “Peter”, grilled up some of our cow share steaks and I whipped up a delicious salad combo on the side. My all-time favorite salads include nuts, fruit, cheese, and a light dressing. Avocado doesn’t hurt either. This salad had it all.

Romaine, red onion, cucumber, strawberries, avocado, goat cheese, walnuts, and this homemade lemon vinaigrette Andrea shared last week on her blog. With such nice, warm temperatures outside it felt like fine summer dining. Sunshine always helps cure the “sickies” as we call them around here. <--- Life with kids, I tell ya.

I hope I continue feeling better and better as the day goes on. I’m still going to take it easy today to make sure of that. I plan on spending lunch with a friend, doing some blog reading during my usual afternoon time slot, and figuring out what to pick for my next 4all by jofit outfit. We get to choose our outfits this time. Help me pick! Which top and bottom would you pick from the London and New Orleans lines? Hint hint – let me know because another giveaway could be coming your way soon. 😉

  • What time do you usually do your blog reading?
  • What items would you choose from the new 4all designs?

  1. so glad you’re feeling better. I crave eggs when I’m under the weather too 🙂

I typically do my blog reading in the am it’s when it’s quiet and as I’m on midwest time a lot of blogger have already posted 🙂

  2. So glad you’re feeling better. And loving the banana soft serve with that PB. I’ve yet to try that flavor b/c I’m afraid I’ll like it TOO much LOL.

  3. Amy Lauren says:

I would get the tennis top because I like the design of it. All your food looks awesome though, especially that salad. I may have to make one like that, we really love salads at my house :).

I read blogs on my lunch break at work and also while I’m drinking my coffee and eating breakfast :).

  4. Angela says:

LOVE the looks of your eats recently Tina! I like both collections, but I’m leaning more towards the London one because it’s pink and I’m a sucker for pink things!! You’d look great in some of those pieces! 🙂

  5. YUM! Tina, you have been eating so well, so beautifully 🙂
    Love the spring flavors 🙂

  6. That salad looks delicious! Glad you’re feeling better. I do most of my blog reading early in the morning before anyone else is in the office.

  7. That salad looks delicious! I normally read early in the morning, today excepted!

  8. Erica says:

SO glad to hear you’re feeling better! And hooray for having your appetite back! Dippy eggs are such a great comfort food when you’re not feeling good. Owww- I’d pick the draped shoulder tennis tank and knit tennis skort (both from London)- so cute!

  9. I usually read blogs in the morning before work or during my morning break at work. Then I’ll catch up at night too if I missed something.

That salad looks delicious — it is so pretty!

  10. I don’t think I’ve ever been so excited for a salad! it’s so colorful and summery 🙂

  11. Glad your feeling better! I’m not feeling all that great today and hoping it’s only a 24 hour thing.

I do half my blog reading in the morning and then the other half after work!

  12. I don’t like real eggs (well, I can eat the egg whites if someone else makes’em!) but all the photos on your blog and Healthy Tipping Point really makes me want to reconsider! Ha I’m an Egg Beaters/Egg White Carton girl. Ha

  13. LauraJayne says:

I love the London collection, but especially the Ruffled Scoop Tennis tank – I’m a sucker for pink workout clothes!

Glad you are feeling better! That salad looks delicious!

  14. I’d pick the v neck tank (london) and the knit pants (new orleans). Glad you are feeling better!

  15. Julie says:

Your food pics today look extremely appetizing this a.m. Guess it’s time to make my breakfast!

I do most of my blog reading when I’m waking up with my coffee at 6am or when I’m on hold with insurance companies at work. As I get older, I’m HORRIBLE at multi-tasking, so blog reading is about the extent of what I’m able to process while sitting on hold 🙂

  16. Brittany says:

New Orleans of course 🙂 I can’t wait to see what you pick!

  17. Glad you’re feeling better! I normally do my blog reading sporadically throughout the day when I have free time at work but I’m trying to do it in more concentrated times so I don’t let it suck away my whole day!

  18. Stacy says:

I’m glad you are feeling better! I like the T Back Racer Tank and the Knit Capri.

  19. I like the New Orleans Zip Front Sweater

  20. I like to read blogs early in the morning, preferably with a hot cup of coffee in hand. It is just so relaxing! I’m glad you are feeling better!

  21. Karen says:

So glad you are feeling better and got your appetite back!! I love salads with fruit too!! I’m making a really yummy salad for a dinner party that I can’t wait to share!

  22. I’m hope you feel better and get to enjoy a great weekend Tina! I read when I can. I think it’s hard to fit it all in at once. I don’t let it get to me when I miss something though. I’m out of town right now and my reader is exploding, but I don’t have much internet service, so right now, I am doing what I can.

    • Tina says:

I “mark all as read” many, many, many times. 😉

I’m glad you are having fun in Tenn with the family! I tried commenting on your site but it wouldn’t let me for some reason. You certainly look happy and sound relaxed. 🙂

  23. I’m glad you’re feeling better today.

I read blog posts when I can — sometimes when I first wake up, others throughout the day when I have a spare minute or two.

  24. Glad you’re feeling better 🙂 I like working on my blog after breakfast so I can have the rest of the day to read up on other blogs. The salad and banana soft serve look delicious! 😀

  25. when someone asks how you like eggs, do you say ‘dippy’? 🙂 I love that reference/title. they look great however you concoct them!

    • Tina says:

Hmmm….I guess I usually say “over easy/medium” since its the technical term. LOL But dippy is definitely more fun to say!

  26. Is it lunch time yet? All that food made me hungry. You take great colorful photos! I can’t really say I do all my blog reading at a certain time. Usually around 8, 12, and then in the evenings sometimes.

  27. I do my blog reading/writing during breakfast, during lunch, and after dinner when I’m relaxing/watching TV with the Husband. It works out perfectly!

  28. Tracy says:

Glad you’re feeling better. I usually read at lunch time and then again in the evenings. Those eggs go by so many different names. I call them “Sunny Side Up.” There’s a giveaway on my blog today, so stop on by!

  29. Sarah says:

So glad to hear you’re feeling better!
I have to confess- your day time not-feeling-well eats look SO good to me!

  30. I have little sense of fashion, so I’ll leave the recommendations to everyone else! I still wear my race shirts to run!

  31. Sarah R says:

Glad you are starting to feel better. I hate being sick, but it’s even worse when you don’t have an appetite! As far as the clothes go, here are my choices:
London:V-neck tank and Gold Bermuda shorts
Neworleans: Tennis T with the Tennis Skort with print

    Cute, cute stuff!

  32. When I do my blog reading varies depending on my to-do list. It’s either in the am before Meghan wakes up, during nap time (like right now), or in the pm after Meghan goes to bed. Notice a pattern? 😉

I’m glad to hear you’re feeling better!

  33. How bright and colorful! I am loving all the springy mixes lately on blogs! looks delish!

I read blogs all throughout the day, sometimes I comment, sometimes I don’t! I like facebook updates the best!

  34. jobo says:

Yummy eats! So glad you are feeling better!!

  35. Dorry says:

That salad is gorgeous! I hope you continue to feel better. I read blogs throughout the day/night. Whenever I can find some free time, depending on work schedule and all those other life things. 🙂

  36. I do most of my reading in the morning but sometimes I check back later in the day for the people who post more than once (I can barely manage one post every couple days, I don’t know how they do it!).

  37. Yogurt bowl looks delish!

As for my picks, it would be the from the New Orleans the Jo sleeveless polo and knit Bermuda shorts. From the London, I would choose the golf pedal pusher if they had a size that fit lol and I like the black Vivian top.

When it comes to blog reading, I do it all throughout the day. My personal blog time is usually at night but for business stuff it’s all day.

  38. Lee says:

I mostly read blogs at night, after dinner.

  39. Errign says:

I do my blog reading at all times – first thing in the morning, during my work shifts at school, after dinner.

I’m totally in agreement with you about the perfect salad components. 🙂 One of my favorite combos is spring mix, goat cheese, pecans, strawberries & maple balsamic dressing!

Glad you’re feeling better! I hate to lose my appetite 🙁

  40. Kristi says:

I usually am reading blogs a little all day. Whenever I have a few minutes I’ll sit down and read a few blogs. I think I need more of a structed routine when it comes to blogging.

  41. I pretty much read blogs all day if I can- that might explain why I never get anything done like I should 🙂

  42. whoa we were in the same exact predicament! I just got my appetite back today too 🙂 yayy glad you’re feeling well! most days, I read blogs sporadically here and there when time allows.

  43. Tina, I’m just catching up on your past few posts, and am so sorry you weren’t feeling well yesterday! Glad to hear your energy and appetite returned. 🙂

My 4all picks: pink v-neck tank and black knit capris from the London line. So cute!

  44. Hope you are feeling better:) I read them all day long, depends on my schedule. I used to want to clear my reader first thing but finally learned that was not the most efficient use of my time.

  45. That salad looks so fresh and perfect for the warmer weather! I’m glad you’re starting to feel better and get some of your appetite back, Tina.
I think the London V Neck is really cute and versatile!

  46. I blog read when baby is down for a nap 🙂 …whenever that may be! Glad you’re feeling better!

    http://www.4allbyjofit.com/tennis/pants-shorts/knit-capri/

I usually read blogs first thing in the morning, even that means my clock is up side down from USA clock and I’m behind with the news.

That’s when I write my posts too and I can be the most creative.

  48. Karolina says:

Glad that you’re feeling better! The salad looks absolutely delicious, and I wish I could reach through the computer and eat it:)

I usually read blogs in the evening when I get home from work, but the weekends I read them on and off all day!

  49. Anna says:

I usually read blogs in the evening after I get home from school or before bed. On the weekend it is more flexible depending on what I have going on.

I like the Solid Cardigan and the Gold Bermuda Shorts from the London collection (cute neckline details in this collection). And I like the pattern on the New Orleans Jo-Polo, and style of the Knit Capri’s.

Glad to hear you are feeling better!
