Field Trippin’ Pumpkin Love

I had another crazy day today. Fortunately this time it was crazy busy and crazy fun, instead of crazy clumsy. After I hit the ground running spinning with this morning’s cycle class, I had special plans with Makenzie. Her first field trip!

We visited Uncle Shuck’s – a corn maze & pumpkin patch north of Atlanta.

As a family we have visited this little haven of fall every year for the past few years, but today’s trip had some special and learning for the kids.

We learned about products that have soy beans in them and how to recycle…

The kids learned how to measure pumpkins…

And they got to learn some fun facts in the "Maize of knowledge”.

The simplest things always take on a new level of excitement when done with children. The many smiling faces and off-the-wall-energy will get you excited about corn, hay rides, and goats too.

Or at the very least, cute kids sitting in a pumpkin patch will warm your heart.

Just keep a keen eye. The little man thinks mulch is fine cuisine.

I, on the other hand, prefer the orange globes behind him as my cuisine of choice. And I was quite disappointed to not get my pumpkin bread fix during our Uncle Shuck’s visit today. It’s tradition!

The craving wouldn’t relent, so I came home and made some pumpkin oats for lunch. I could eat breakfast all day every day, so this actually made me quite happy. Especially since I had to rush my breakfast this morning.  I needed to make up for it.

The pumpkin oats didn’t kill the craving, though. I had to bring out the big guns. Well, looky there.

I offered to bring a dessert to tonight’s small group and had the ingredients for the easiest pumpkin spice cookies on hand for such a need. If you don’t know this simple mix, you must give it a shot – one box spice cake mix and 2 cups (or one 15 oz can) pumpkin. Mix it all together. Plop on a baking sheet by the spoonful and bake ‘em up for 15 minutes at 350.

I love adding white chocolate chips to mine. Heavenly! I will happily eat as many as necessary to satisfy my field-trip inspired pumpkin cravings. Yes, siree!

    When I was in about first grade, we went on a field trip kind of like that–to a farm, at least. It was pretty fun. In 5th grade we went to a Twins game with DARE (my dad came with!), and in 6th we went to Fort Snelling and the Capitol (Dad came with on that one, too!). High school… not so many field trips. Though in Science one year we went to a quarry to look at rocks. That was exciting…

    I’ve been craving pizza lately. I don’t know why, I just want pizza. Maybe I’ll have some this weekend when I’m home. 🙂

    How fun!! I love it! I haven’t done this since I was a kid. There’s a place on Sauvie’s Island here in Portland where there are corn maizes, pumpkin patches and stuff. Every year I plan on going and never do.

  5. I have already roasted 3 pumpkins and eaten them. I’m seriously loving this season! I can never eat the pumpkin bread at those places so I always come home and bake some right away. The cookies look like a perfect fix!

  7. I used to LOVE field trips…so did my dad! He used to get paid for going on field trips….needless to say my dad was the all time volunteer… 🙂

    Since I grew up in Detroit, we had the pleasure of going to the Henry Ford Museum and Greenfield Village…you sat in old school hoses, saw how cars were started and it was SUPER cool.

    Some of those field trips with my dad – are my MOST favorite memories….treasure them and always volunteer…

    All those photos are so cute! It looks like everyone had a great day at the pumpkin patch 🙂
    My last craving was for chocolate chip cookies. So I made a batch and ate one very slowly with a cup of tea and left the rest for my family to consume (didn’t take very long at all) and voila! Craving gone 🙂
    My favourite field trip was the museum. I still love going there as an adult and many of the exhibits are still the same.

      I much prefer savoring the food so i really get to satisfy the craving. Otherwise, I will inhale ten cookies and still want more.

    Those cookies look yummy and for something so simple, I will definitely have to try them! I need to pick up some cans of pumpkin anyway, so many great recipes to make.

    I remember going on a field trip to Epcot + Sea World when I was in 4th grade. It was an overnight trip. I really loved it so much! I definitely had some cool field trips :). It looks like Mackenzie had a great time on hers and that you had an awesome time too (minus all that junk food they showed the kids, lol).

      Oh my gosh, yes!!!! The table drives me crazy because I ahve to clean it after every meal. Which then drives my husband crazy. The things you don’t think about when shopping pre kids. LOL

  24. Oh – and I made pumpkin/sweet potato steel cut oats in the Crockpot the other night – enough for a week’s worth of breakfast if my kids don’t get to it first! Best Crockpot oats I have ever made.
