Lemon Basil Quinoa with Roasted Veggies (Plus Bday Recap)

Good morning! How are you all today? I’m well enough. Although little M and I both woke up with some sort of sickness going on. I don’t feel bad, but can’t stop coughing. Poor M has it all – cough, icky nose, tired, and I’m assuming achy from her clinginess. I hate seeing my baby sick. I think its from the church daycare and all the kids bringing in germs from schools and daycares they are returning to these days. We’ll just chill today and I will have to see how I’m feeling later if I head to the gym or not.

Okay – birthday recap time! What you all are here for. 😉 Yesterday morning started off a bit rough with M’s temper tantrum at the store and someone STEALING my bike at spin. My bag was on it and I left for 5 minutes to check M in the childcare. When I came back a lady had moved my bag and said she was there first. Whatever.That was the last bike so I ended up leaving, planning to just do a Turbo workout here later…which didn’t happen because I got too tired and distracted by my present from Peter. I do what I want every day and especially on my birthday.

The day picked up from there. I met a friend for story time at the library, which M loved! Then we hit up Yogli Mogli for some frozen-yogurt and girl talk.

I delighted in half Red Velvet Cake with white chocolate chips and half NY Cheesecake with raspberries. Oh dear heavens was it good. This place just opened and I see myself dragging Peter here soon for a repeat performance.

I continued eating just what I wanted with dinner last night. I made a Lemon Basil Quinoa with Roasted Veggies. The stars of the show…

I roasted the brussels sprouts and chopped carrots in a 425 oven for 30 minutes. Cooked up the quiona according to the directions. Heated up some Great Northern beans. Then tossed it all in a simple dressing of 2T olive oil, 1 tsp minced garlic, the juice of 1 lemon, and some fresh chopped basil.

Peter got me a netbook for my birthday!! How perfect for blogging!? Needless to say, I’m in love. Time to say goodbye from my baby computer. 😀 Have a fabulous Tuesday!

  • What would you pick for your birthday dinner? I did have the quinoa on my actual birthday, but I admit we will be going to a Hibachi place on Thursday with my parents. I’ll know boy or girl then too!

    I blog from my large and cumbersome workstation. I really should get something small and portable so that I can read/post in the lounge and not be chained to a desk. What’s the point in having wi-fi if I never move??? 🙂

    I like to try something out of the ordinary (for me) on birthdays… like Indian food, or fondue… but I love hibachi, too!

      I have a feeling boy, but its not as strong as it was. I guess we will see. In less than 48 hours! Gah I can’t wait!!!

      Quinoa has kind of a nutty flavor and a bit more of a dense chew to it than rice. Not chewy, but not smooth necessarily either. It’s kind of hard to describe! LOL

    I blog from my desktop in our office, but also blog from Hubbs laptop (which I’m currently on) when I want to join him in the living room. Even though I blog, it’s nice also to be near my handsome hunk:)

    That yogurt looks so ridiculously good. I almost can’t stand looking at it! I may need to add that to my “List” of foods to eat after competition hehe I may have to change my blog name to ‘Jabba the Hut” 😉

    For my birthday dinner, I always go with sushi. My 30th was last month and we went to a Hibachi Steakhouse (since not everybody likes sushi- weirdos!) and I had excellent sushi. I’ll be eating sushi again after comp and can’t wait! 🙂

      I remember my post comp food list. And I ended up not even wanting most of it because it made me feel so gross by that point.

      And I would give anything for sushi. I am making Peter bring me some in the hospital after this baby is out of me. LOL

  11. Congrats on that gift girl! I use a netbook that the hubs got me after I fried our laptop. I don’t have all the software and capabilities that the other computer had but I love the compactness of the netbook. Dinner sounds fantastic to me. Yum. So glad the day ended on an up note for you 😉

      Carrot cake pancakes?! Now…why didn’t I think of that? Haha! i would have been all over those. 😀 And sadly I’m only feeling worse. M seems to feel better. Or she’s the same and just looks better to me because I’m having a harder time keeping up. You know how it goes.

    Frozen yogurt is always a *must* on my birthday. When I was little I always requested macaroni and cheese “from the box” (aka Kraft). Haha. I made it clear that I didn’t want my mom’s homemade recipe! Now, I usually chose to go out to eat a tapas restaurant.

    For my bday dinner, I would love to go to this local Mexican place that makes a KILLER vegetarian taco salad. I don’t like Mexican food except for this place. It’s awesome.

    If my mom is anywhere around on my birthday, I ask for her lasagna. When I was a kid, I went through about a 10 year period where I always wanted steak and baked potato on my birthday. I also went through a full year when all I wanted to eat for any meal was fried egg sandwich on wonder white. mmmmm mmmm good!

    hm…an egg sandwich sounds good for lunch 🙂

    I do not like when people steal equipment at the gym — and even if I do it accidentally I always give it up to the person who thought I stole it (even if I didn’t).

    I have a computer set up in my kitchen — J set it up for me and it works perfectly.

Usually I’m at my own house; sometimes at the Boyfriend’s and rarely at Starbucks or Barnes & Noble.       I’m loving mine! I don’t have anything downloaded to it besides Live Writer so it is strictly for blogging and online stuff. Anything else I still use the laptop for. It sure is nice to have something so small and portable with great battery life though. Now, the couple hours of writing/blogging/etc that I have to do outside of M’s naps I can sit on the floor and play with her and still check in on the computer. Instead of having to sit at a desk with her playing around me. That’s the biggest plus!

  43. Your quinoa sounds delicious! I blog from windows live writer which I have installed on my work pc so I can plan posts on my lunch time, my netbook, although I don’t use this unless I’m out and about as its slow! I mainly use my toshiba laptop which is super fast, I love it!

      I have a Toshiba laptop too that I love! The netbook sure is nice for its portability though, which I need. Love live writer too! I can’t remember what it was like blogging without it.
