Lemon Basil Quinoa with Roasted Veggies (Plus Bday Recap)
Posted: August 24, 2010 at 11:00 amGood morning! How are you all today? I’m well enough. Although little M and I both woke up with some sort of sickness going on. I don’t feel bad, but can’t stop coughing. Poor M has it all – cough, icky nose, tired, and I’m assuming achy from her clinginess. I hate seeing my baby sick. I think its from the church daycare and all the kids bringing in germs from schools and daycares they are returning to these days. We’ll just chill today and I will have to see how I’m feeling later if I head to the gym or not.
Okay – birthday recap time! What you all are here for. 😉 Yesterday morning started off a bit rough with M’s temper tantrum at the store and someone STEALING my bike at spin. My bag was on it and I left for 5 minutes to check M in the childcare. When I came back a lady had moved my bag and said she was there first. Whatever. That was the last bike so I ended up leaving, planning to just do a Turbo workout here later…which didn’t happen because I got too tired and distracted by my present from Peter. I do what I want every day and especially on my birthday.
The day picked up from there. I met a friend for story time at the library, which M loved! Then we hit up Yogli Mogli for some frozen-yogurt and girl talk.
I delighted in half Red Velvet Cake with white chocolate chips and half NY Cheesecake with raspberries. Oh dear heavens was it good. This place just opened and I see myself dragging Peter here soon for a repeat performance.
I continued eating just what I wanted with dinner last night. I made a Lemon Basil Quinoa with Roasted Veggies. The stars of the show…
I roasted the brussels sprouts and chopped carrots in a 425 oven for 30 minutes. Cooked up the quiona according to the directions. Heated up some Great Northern beans. Then tossed it all in a simple dressing of 2T olive oil, 1 tsp minced garlic, the juice of 1 lemon, and some fresh chopped basil.
I finished out the night playing with my new toy…
Peter got me a netbook for my birthday!! How perfect for blogging!? Needless to say, I’m in love. Time to say goodbye from my baby computer. 😀 Have a fabulous Tuesday!
- What do you blog from?
- What would you pick for your birthday dinner? I did have the quinoa on my actual birthday, but I admit we will be going to a Hibachi place on Thursday with my parents. I’ll know boy or girl then too!
May have to insist on either my vegetarian moussaka or thai for my birthday, both of which my husband hates!
And hey – its YOUR birthday AND you’re pregnant so he can’t complain one bit. 😉
Oh my goodness! I was looking at Kara’s name when typing that comment. I know you’re not pregnant…but either way the hubs still can’t complain. LOL
Hahaha. Yeah, I was wondering what you knew that I didn’t. 😉
I can’t believe someone stole your bike!!! Rude!
What a great Birthday gift for a blogger, that’s awesome!
I’m actually trying to decide my Birthday dinner for this weekend…..frozen yogurt and quinoa sounds pretty good right now!
Hope you and M feel better soon 🙂
Yay for bdays! And I bet when the day comes you will know exactly what you want. One of the pluses of pregnancy cravings. LOL
It’s pretty cool! There are moments I know exactly what I want and nothing else will do!
I can’t believe someone stole your bike on your birthday! But glad you had a great rest of the day and yummy dinner. So awesome about your new netbook. I blog from my Dell laptop – love it.
What an awesome present! I just have a little mac laptop, but she is definitely my baby!
I blog from my large and cumbersome workstation. I really should get something small and portable so that I can read/post in the lounge and not be chained to a desk. What’s the point in having wi-fi if I never move??? 🙂
What a sweet hubby!!
I like to try something out of the ordinary (for me) on birthdays… like Indian food, or fondue… but I love hibachi, too!
can’t wait to hear if you’re having a boy or girl 🙂
Hibachi will feel new to me this time. I haven’t been in WAY too long. I love going to new places too.
aw what a great bday present! I use a Mac, but SO wish it had Live Writer!
I bet. I couldn’t imagine blogging without Live Writer now. Love it so much!
Hi Tina! I meant to pop by yesterday to wish you a Happy Birthday but i’m sorry I wasn’t able to! It looks like you had a great day espec’ getting a notebook! woot!!
So exciting to be finding out pink or blue soon! Do you have a feeling either way?
Another Q- what does Quinoa taste like? Never had it!!
I have a feeling boy, but its not as strong as it was. I guess we will see. In less than 48 hours! Gah I can’t wait!!!
Quinoa has kind of a nutty flavor and a bit more of a dense chew to it than rice. Not chewy, but not smooth necessarily either. It’s kind of hard to describe! LOL
Woo hoo! Score on the netbook! You totally deserve it! What a great gift! 🙂
I blog from my desktop in our office, but also blog from Hubbs laptop (which I’m currently on) when I want to join him in the living room. Even though I blog, it’s nice also to be near my handsome hunk:)
That yogurt looks so ridiculously good. I almost can’t stand looking at it! I may need to add that to my “List” of foods to eat after competition hehe I may have to change my blog name to ‘Jabba the Hut” 😉
For my birthday dinner, I always go with sushi. My 30th was last month and we went to a Hibachi Steakhouse (since not everybody likes sushi- weirdos!) and I had excellent sushi. I’ll be eating sushi again after comp and can’t wait! 🙂
I remember my post comp food list. And I ended up not even wanting most of it because it made me feel so gross by that point.
And I would give anything for sushi. I am making Peter bring me some in the hospital after this baby is out of me. LOL
we blog on macs since that’s what we have for photography. i LOVE it 🙂 and dinner? somewhere with great shrimp and sushi 🙂
Congrats on that gift girl! I use a netbook that the hubs got me after I fried our laptop. I don’t have all the software and capabilities that the other computer had but I love the compactness of the netbook. Dinner sounds fantastic to me. Yum. So glad the day ended on an up note for you 😉
Great gift! Glad you birthday ended well! The yogurt looks so good and dinner too! I am a Mac girl. I love them so! I had carrot cake pancakes on my birthday for dinner. So good! I hope you two start to feel better soon!
Carrot cake pancakes?! Now…why didn’t I think of that? Haha! i would have been all over those. 😀 And sadly I’m only feeling worse. M seems to feel better. Or she’s the same and just looks better to me because I’m having a harder time keeping up. You know how it goes.
Happy belated birthday!!! I’m so glad you were able to enjoy foods you love…That’s what birthdays are for, right? The red velvet-white chocolate combo sounds scrumptious! And your quinoa recipe sounds tasty too!
Frozen yogurt is always a *must* on my birthday. When I was little I always requested macaroni and cheese “from the box” (aka Kraft). Haha. I made it clear that I didn’t want my mom’s homemade recipe! Now, I usually chose to go out to eat a tapas restaurant.
So jealous of your netbook! I would love to have one. 🙂 I still haven’t tried quinoa.
For my bday dinner, I would love to go to this local Mexican place that makes a KILLER vegetarian taco salad. I don’t like Mexican food except for this place. It’s awesome.
I’m steaming about that lady stealing your spin bike. Grrrr.
If my mom is anywhere around on my birthday, I ask for her lasagna. When I was a kid, I went through about a 10 year period where I always wanted steak and baked potato on my birthday. I also went through a full year when all I wanted to eat for any meal was fried egg sandwich on wonder white. mmmmm mmmm good!
hm…an egg sandwich sounds good for lunch 🙂
Well, hey! Looks like I helped you decide lunch. 😉 I went through phases too. Including a steak and potato one myself.
Score!
I blog from my Macbook Pro. It contains my entire life. I might die without it! 🙂
Hope you and the little one feel better soon, Tina! Your birthday looks awesome – that frozen yogurt has my mouth watering. Your dinner looks delicious as well. 🙂
Ahh! Feel better!
Your netbook is so cute!
I do not like when people steal equipment at the gym — and even if I do it accidentally I always give it up to the person who thought I stole it (even if I didn’t).
I have a computer set up in my kitchen — J set it up for me and it works perfectly.
Agh, I totally forgot to wish you happy birthday yesterday!! I keep seeing all these great quinoa recipes but this one really sounds yum. I love finding that perfect fro yo combination.
I blog from my MacBook which my husband bought me for going back to school. I hadn’t spend much time on apple computers so I got a little frustrated at first but now I completely love it! Getting on a PC is weird now!
Happy Belated Birthday pretty Momma!!!!!
I have the same laptop at home and I LOVE It. 😉 You’ll enjoy it thoroughly!
The quinoa looks amazing, and I’ve been trying to find some new recipes! I’ll let you know when I try it out!
Uuuugh, mean lady at spin! Don’t you worry, it’ll come back around to her some day. Gotta believe in Karma.
I blog from my mac book and occasionally my iphone.
Will you share boy or girl with us?! I’m excited!
I blog from my deskstop computer (at work, shh) or my laptop at home.
Birthday dinner consisted this year of free veggie quesadillas from a great hispanic restuarant with a glass of white wine.
Free is always a winner meal in my book!
And i won’t share your little secret. 😉 😀
I can’t believe someone stole your bike! Ridiculous. I hope you and M feel better soon.
Love the present! What a sweet gift. I usually blog from my laptop. I’ve been going with my family to the same Italian place for my birthday dinner since I turned 18. It’s fun 🙂
Lucky! I blog from my soon-to-be ancient iBook G4, where I can get a wireless Internet connection. Usually I’m at my own house; sometimes at the Boyfriend’s and rarely at Starbucks or Barnes & Noble. (When I’m at one of those places, I try to stay away from the weight-loss blog and work on my writing.)
What a great gift! I have a MacBook, so I blog from that. It’s practically a part of my being. Sad, but true!
I blog with my lap top. I love that I can take it whereever with me. Super convenient.
Happy Birthday Tina!!! 😀 Sounds like a great day besides the spin situation…what a jerk lady!
enjoy your amazing present:)
Oooh – I would have been SO MAD if someone took my spin bike like that! Talk about R.U.D.E.!!!
Hopefully all of the other birthday fun made up for it!
Love the new netbook! What a great gift! 🙂
Wow, your new blogging device looks great!!!
Hope you two feel 100% real soon!
What a FABULOSO bday gift!! Enjoy!
I usually blog from my iPad. Love it!!
So many exciting things going on here! Froyo and birthday presents: yes! How sweet of him! I blog from my Acer laptop at home, but I’m dying for an Imac with a huge screen as well. Someday…
My birthday dinner would definitely be either gourmet pizza or steak. I eat like a boy.
I’m so jealous of your Netbook!!! I want one so bad. I can’t wait to hear how it is!
It’s amazing how LOW some people will stoop re: a spinning bike. The nonsense at the gym I used to belong to was outrageous. Glad to hear you simply walked away although I would have been tempted to dump my water bottle over her head!
Hope everyone in your house is feeling better soon.
I’m so sorry you’re sick! Bummer. I do all my blogging from my little netbook and I love it. I know you will too.
RUDE that someone stole your bike!!!!!! And on your birthday too. 🙁 You are so nice though, I wouldn’t have let them get away with it so easily. At least you had your day brightened with some yummy yogurt, yummy dinner, and an awesome birthday gift!!! I blog from my laptop and don’t know if I could keep up without it!!
Hope M feels better soon!!
Love the fro yo AND the quinoa!! I blog from my netbook for the most part. I love how small it is because I can literally just throw it in my purse and go anywhere with it! 🙂
I think we have the same sickness going on. Bah.
Congrats on the gift! Netbooks are awesome and I totally want one. I blog from my macbook pro but it would be nice if I could do it from a smaller comp on the go!
I like the new toy – how perfect for you. Your husband did very good! We just got a new yogurt place here called Yogurt World and it is AMAZING!!!
i am sorry i am late to the party! happy birthday =) what a GREAT gift.. i am sure you are ecstatic about it!!!!!!!!!!
xoxo
yay! happy birthday (again) dear! what a fun present! my birthday is tomorrow and I’m supposedly getting a netbook as well. so I would love to know what you think of yours! 🙂 xox
I’m loving mine! I don’t have anything downloaded to it besides Live Writer so it is strictly for blogging and online stuff. Anything else I still use the laptop for. It sure is nice to have something so small and portable with great battery life though. Now, the couple hours of writing/blogging/etc that I have to do outside of M’s naps I can sit on the floor and play with her and still check in on the computer. Instead of having to sit at a desk with her playing around me. That’s the biggest plus!
Your quinoa sounds delicious! I blog from windows live writer which I have installed on my work pc so I can plan posts on my lunch time, my netbook, although I don’t use this unless I’m out and about as its slow! I mainly use my toshiba laptop which is super fast, I love it!
I have a Toshiba laptop too that I love! The netbook sure is nice for its portability though, which I need. Love live writer too! I can’t remember what it was like blogging without it.
Your eats look perfect to me! Glad you were able to celebrate your birthday in style (and more than once). You are a gift to this world, Tina:).
