Short & Sweet

Hi everyone! I'm so sorry that I am just now getting a chance to update. 🙁 Today was another heck of a busy day. It was Bible reading, Sunday school class planning, tutor lesson preparing, and baby M playing. I also found time to sneak in some personal reading time, too. Both blogs and book. 🙂  So, I guess I was more into catching up with you all instead of posting here. 😉 AND I wanted to wait until I had a picture of our dinner to post since I knew it was going to be a good one.  Note to self: I soooooo need want a new camera!!!

oat chicken tenders and roasted brussels

Hubs cooked up some homemade chicken tenders and I roasted some brussels. Mmm mmm mmm. Even M loved them! She devoured the brussels sprouts. Gotta start 'em early, right?

Well here is the 'recipe'. I put it in quotations because we pretty much eyeballed it.

Ingredients

  • 2 large chicken breasts
  • 1/2c rolled oats
  • 2 egg whites
  • seasonings of choice

It's so simple. Grind the oats in a food processor to a flour-like consistency. Add in seasonings of choice. We used a Kickin' Chicken seasoning and some garlic powder. Cut the chicken breasts into thin strips. Put egg whites in large bowl and place all chicken tenders in the bowl. Mix around to coat. Put oats/seasonings mix into a big plastic ziploc bag. Throw the egg-white coated tenders into the bag of oat flour and give it a shake to coat. Grill tenders up in skillet or indoor grill pan. Enjoy!

And I'm pretty sure many of us know how to roast veggies. But in case you don't - simply chop the veggies into even pieces (chopped the sprouts in half). Then toss in olive oil, salt, pepper, and any other seasonings you like. Roast in oven on 425 for 15-20 minutes. 🙂

      I’m reading a bunch of parts. It’s 1-3 chapters a day of various books of the Bible. I am following two plans from the bibleplan.org website. Today was some Matthew, Acts, Exodus, and Esther. Always inspiring reading about these people’s faith! Hebrews is a goodie too. Heck, its all good. Except for maybe Numbers and Leviticus and those ones that go on and on with all the names. 😉 Still important but sometimes its like “Ok I get the point! LOL”
