‘Wiches and ‘Dillas

I’ve been all over the easy meals of food tossed between two pieces of carby goodness. Last night’s dinner featured a fabulous quesadilla and today’s lunch featured one of the best sandwiches ever.

As you know, I have wanted to branch out in trying new things for our dinners. I easily get into ruts where we will make the same things over and over. However, I don’t have the creative mind for the kitchen to come up with completely new and different styles and recipes each week. To simplify, I try to have "themed” dinners for various nights, then switch up what I make. It makes it easier for my limited cooking brain to handle. One of those “themes” is sandwich night.

Recently, I have branched out from the classic sandwiches and tried new things, like my roasted eggplant panini. It still makes for an easy meal, but at least its different  too. Last night I went for goat cheese and veggie quesadilla. Yes, it tasted as good as it sounds. And it was super easy to prepare!

I sautéed up some onions and mushrooms. After they softened, I added a couple handfuls of spinach to wilt down.

While the spinach was cooking down, I spread a couple tablespoons of a herbed olive goat cheese on a whole wheat tortilla.

I topped another tortilla with the veggie mixture and then placed it back in the pan.

Topped it with the goat cheese tortilla and cooked it up a bit to get melty on the inside and slightly crisp on the outside. Served up for a simple, healthy dinner.

As much as I enjoyed that quesadilla dinner, it didn’t quite compare to my sandwich for lunch today. A classic BLT with avocado is mighty tasty. And the fact that it came as part of a lunch date with a good friend and her little man made it even better.

Some of you may remember Em from her old blog HomeCookedEm. We became good friends over the past year and bonded over our pregnancies together. She welcomed her boy to the world 3 weeks before baby B made his grand ice-storm appearance. We finally managed to get out with the wee ones and have some bonding time today. We hit up an old favorite – the sandwich shop Which ‘Wich.

I love how you can custom build your sandwich with so many different toppings and combos! Just look at that board of options. I originally thought to try a hummus + pesto combo, but I recently saw someone feature a BLT with avocado. YUM! That combo sounded perfect today. And it was.

That beauty would be a BLT with avocado, olives, pepperoncinis, mushrooms, deli mustard, and onions. I want another, but I guess my stir-fry dinner will have to do.

Question of the Evening – What type of meal can you never get sick of because of its endless possibilities? Salads? Stir-fries? Oats? Frozen yogurt? 😉

  1. definitely both salads and oats! i’ve been eating both for years daily (for the most part). theres just so much you can do with both that it would be hard to get sick of them.. for me at least 🙂

    Oatmeal and egg meals I never ever tire of. Sometimes I even put egg whites in my oats. I just love them so much, I am such a breakfast fiend.

    I hope I made a lot of new mommy friends when I decide to have a baby in a couple of years. It’s so nice to have someone to go through that time together. And I LOVE places that let you customize your food. Nobody knows what I like better than me. 😉

    Sandwiches/wraps – there’s a vegetarian wrap place on-campus that I always go to. There’s always a different, creative, yummy wrap each day. Avocado sandwiches are the best – my fav is grilled cheese & avocado.

    and so does the sandwich… a BLTA is one of my very favorites, so much so that it is most definitely one thing I never tire of!

  13. I’m with ya on the quesadillas. Love ’em a million different ways. Same with any quinoa based veggie mix, Oh and stir-fry. And pizza too!

  14. BLT’s are so good! I don’t even know why. I never tire of wraps. Throw anything into a tortilla, roll it up, and it’s delicious.

    Back in college, my roommate and I had a panini press, and we used to put every wrap/sandwich/quesadilla/tortilla/piece of bread onto that thing. Everything tastes good after it’s been grilled!

  15. I like your meal theme idea… that would make it a lot easier to plan meals! I don’t know how you cook at all with two little kids, I have a hard enough time meal planning for my husband and I 🙂

    I don’t think I will ever get sick of salads or pasta! Both have so many potentially yummy combinations!

    Themed meal nights are a great tip for meal planning! I’d like to try a stir-fry night because there are lots of possible combinations and you can mix up something new every time!

    One of my girlfriends works in Marketing for Which Wich – great sandwich shop! There’s one right down the street from us in Dallas. I love salads – you can make so many different variations. And I make a lot of quinoa-based dishes. Works with Asian, Mexican, Italian, etc.

      I took a pit stop at the store before heading to lunch bec I needed more breastfeeding pads. You should have seen me hauling both of them around so I didn’t have to wait for M to dawdle around walking.

    I have to say rice is my absolute favorite go to. You can make up a big batch and have different style dishes all week. I never get tired of sandwiches though so many different ways to do it. We will have to plan a get together one of these days! I know you live right there but somehow time just flys by.

      I know! Peter told me the kiddos were asking for a visit. And this week has had something basically every day. We’re doing story time today with our playgroup.

  26. I love Which ‘Wich, but I’ve only had it for breakfast- and egg sandwiches are one of my favorites! However the only Which ‘Wich we have in the area is inside the terminal of our airport- so I only get it when I travel! So excited to travel next week!

  27. I don’t think I could ever be sick of soup! I do go through eating phases though… overnight oats and green monsters particularly phase out and back in every now and again. 🙂

  34. I love making BALTS (bacon, avocado, lettuce, tomato) and we have them at least once per week. Avocado makes anything taste good 🙂

  35. Because of its endless varieties? Definitely stir fry. I can use whatever veggies I have on hand, meat or no meat, switch up the grains we eat with it… so many possibilities. 🙂

    I love Which Wich. I used to work in a building that had a Which Wich a block away. It was heaven. A lot of people always say what is the one food you could eat for the rest of your life…mine would definitely sandwiches. The possibilities are endless. I could never ever get sick of them!

  43. Love goat cheese’s ability to make everything wonderful. I love whole wheat pasta since it’s so versatile. Also, white wine is the perfect base to add flavor to anything!

    I don’t think I could ever get sick of fro-yo or yogurt and bananas and peanut butter in general. Or ketchup, but that doesn’t really qualify as “food” except probably the way I eat it…. 😉

    I love Which ‘Wich! I went to the one in Nashville for the first time a couple of summers ago and have been dying to go back! It took my indecisive bootay FOREVER to pick my sammich but it was SOOOOO good!

    I could never ever ever get bored with my bowl of oats! I very rarely have the same combo more than once…so versatile!
