I Wish

Posted: April 26, 2011 at 8:10 am

I wish I had made extra of these Peanut Butter Banana Flax Muffins I made to bring as part of a meal for someone who just had a baby.

[I used this recipe but instead of 2 cups all purpose flour, I used 1.5 cups whole wheat pastry flour and 1/2 cup ground flaxseed.]

I wish there were more hours in the day. I had so much to do yesterday that I did not sit down for lunch until 1:30. That also meant I had to eat lunch whilst nursing.

I wish laundry would fold itself.

I wish my phone screen actually worked.

And I wish my husband didn’t bum phones off friends recycling them at our church.

I wish I was a better mom some days. I don’t believe I am a bad mom, but some days my patience wears a little thin with Makenzie and I hate that.

I wish I could get more creative in the kitchen. I have eaten a version of the following three things way too often recently.

Actually, you know what? A lack of creativity isn’t so bad. Those meals are delicious!

I wish you all knew exactly how much I appreciate each of you. It saddens me that recently I have not had as much time as I would like to read/comment on your blogs. I hope you can recognize my support and care for you regardless.

I wish date nights happened a lot more frequently.

Saturday night was fabulous! And for those wondering about my dress decisions – I ended up borrowing one of my mom’s dresses. Haha!

We ventured to the Buckhead area of Atlanta for dinner at Via, an Italian restaurant we purchased a Groupon to awhile ago. Who says date nights can’t also be frugal nights? I loved getting to try someplace new.

I ordered the spinach salad to start. It came with caramelized onions, hardboiled egg, and pancetta in a balsamic dressing.

It had so much flavor. I loved every bite. Peter even preferred it over his house salad.

We ended up sharing two things for our dinner. A pizza with basil, mozzarella, roasted red peppers, red onions, black olives, and pepperoni.

As well as some goat cheese fritters with strawberries and a balsamic glaze.

I really liked the pizza. It reminded me of some of the pizza I had in Italy. As for the goat cheese? You all know me, right? If you think I loved it, you would be correct. I could have made a meal out of those alone.

After dinner, we started heading home because I didn’t know how Braedon handled taking a bottle from my mom (he can act finicky with bottles of my pumped milk). Luckily, he did great so we decided to stay out a little longer. We checked into seeing a movie and I was thrilled to remember Water For Elephants is now out.

So, we killed some time with an ice cream pit stop before seeing the late showing of the film, which I thought was very well done. I love the story line and think Reese Witherspoon & Robert Pattinson portrayed it well.

I hope we can have date nights more now that Braedon is old enough for others to watch him and Makenzie together more easily. I missed dates! Plus, Peter & I believe they matter so much in a marriage. You have to keep the relationship fun. We also believe in keeping our marriage at the forefront because a solid marriage helps make a solid family in our opinion. Here’s to more in our future!

  • What is your perfect date? I actually adore dinner & a movie dates.

  1. I am jealous of everyone going on dates. I REALLY miss dates.

With my first, we never went on dates becuase I was nursing and for some reason we just didn’t do it. I really regret that now. I was never apart from Lucas for more than 1-2 hours. We had family that could have watched him but never took the oppurtunity!

Now, in Alaska, we have NO family here and still haven’t found someone we trust to watch our boys at night. This weekend we are having a friend watch them (they have 2 boys also so we are dropping them off at their house) for an hour so we can go get lunch together and I am SOOOO excited! I am praying that we can find someone we love so we can go out at night to a dinner and a movie!!

My inlaws are coming this summer and I am already so excited because I know they can stay with the boys (trust that compleltey obviously) and we can go OUT!

Use your iphone as a phone!!

Yay for date night. That restaurant looks pretty. I’ve never been there. I think my perfect date night is also dinner and a movie. Or maybe dinner, frozen yogurt and a movie.

  3. Girl, if you ever find a way for laundry to fold itself, patent that ish!

Your date night sounds lovely. I want to see that movie!

  4. Did you read the book Water for Elephants? I loved the book and am wondering how it compared.

I love date nights, too! GOOD dinner and a movie is my fave.

I didn’t read the book actually. It’s one of the only times I have done that. Usually I have to read the book before I see the movie…but I just haven’t had the time!

  5. LOVE the dress pick! And “We also believe in keeping our marriage at the forefront because a solid marriage helps make a solid family in our opinion.” AMEN!

  6. Great pics of you and the hubs! Who took those for you?

No such thing as a forever patient perfect mommy! Which is a good thing, because otherwise you’ll make every other woman feel bad. Haha!

I’ve never been on a date…but I think a perfect date would entail hiking and some kind of hearty grub afterwards. 🙂

  8. I love your dress girl! You look amazing and I am so happy you had such a great night out. I love date nights.

  9. I wish I could be busier 🙁 I would do some of your chores for you! 😉

I love to do dinner and a movie for date nights. Also to have a drink on an outdoor patio. I definitely think making date nights a priority is very important when you have kids or get busy.

  10. I m all for outdoor dates. We both are pretty active people and hate staying inside even if sometimes it’s nice to go on a fancy restaurant. Being young and pretty tight on budget, we had to be creative.

I like ice cream dates that involves playing games while sitting on a blanket and watching the blue sky and everything nearbies gardens. No matter the weather, I always receive flower from him and that makes me gratefull!

Ahh…I agree with your “i wish” statements! Cute dress for date night. Hmm…my favorite date nights include dressing up for dinner, walking along the water, or sitting on fountains talking with coffee. Yes, that’s my favorite. Pretty much anything spending time together is just ok with me though:)

  12. […] day. Alas, I will have to choose. Oatmeal or smoothie? Oatmeal or smoothie? Oatmeal or smoothie? Or banana muffins??? As you can see, endless possibilities for a happy […]
