I Wish

I wish I had made extra of these Peanut Butter Banana Flax Muffins I made to bring as part of a meal for someone who just had a baby.

[I used this recipe but instead of 2 cups all purpose flour, I used 1.5 cups whole wheat pastry flour and 1/2 cup ground flaxseed.]

I wish there were more hours in the day. I had so much to do yesterday that I did not sit down for lunch until 1:30. That also meant I had to eat lunch whilst nursing.

I wish laundry would fold itself.

I wish my phone screen actually worked.

And I wish my husband didn’t bum phones off friends recycling them at our church.

I wish I was a better mom some days. I don’t believe I am a bad mom, but some days my patience wears a little thin with Makenzie and I hate that.

I wish I could get more creative in the kitchen. I have eaten a version of the following three things way too often recently.

Actually, you know what? A lack of creativity isn’t so bad. Those meals are delicious!

I wish you all knew exactly how much I appreciate each of you. It saddens me that recently I have not had as much time as I would like to read/comment on your blogs. I hope you can recognize my support and care for you regardless.

I wish date nights happened a lot more frequently.

Saturday night was fabulous! And for those wondering about my dress decisions – I ended up borrowing one of my mom’s dresses. Haha!

We ventured to the Buckhead area of Atlanta for dinner at Via, an Italian restaurant we purchased a Groupon to awhile ago. Who says date nights can’t also be frugal nights? I loved getting to try someplace new.

I ordered the spinach salad to start. It came with caramelized onions, hardboiled egg, and pancetta in a balsamic dressing.

It had so much flavor. I loved every bite. Peter even preferred it over his house salad.

We ended up sharing two things for our dinner. A pizza with basil, mozzarella, roasted red peppers, red onions, black olives, and pepperoni.

As well as some goat cheese fritters with strawberries and a balsamic glaze.

I really liked the pizza. It reminded me of some of the pizza I had in Italy. As for the goat cheese? You all know me, right? If you think I loved it, you would be correct. I could have made a meal out of those alone.

After dinner, we started heading home because I didn’t know how Braedon handled taking a bottle from my mom (he can act finicky with bottles of my pumped milk). Luckily, he did great so we decided to stay out a little longer. We checked into seeing a movie and I was thrilled to remember Water For Elephants is now out.

So, we killed some time with an ice cream pit stop before seeing the late showing of the film, which I thought was very well done. I love the story line and think Reese Witherspoon & Robert Pattinson portrayed it well.

I hope we can have date nights more now that Braedon is old enough for others to watch him and Makenzie together more easily. I missed dates! Plus, Peter & I believe they matter so much in a marriage. You have to keep the relationship fun. We also believe in keeping our marriage at the forefront because a solid marriage helps make a solid family in our opinion. Here’s to more in our future!

    I think you do a great job of blogging. It is obvious that you love your family, blogging and connect w/ your readers. I admire the amount of balance you have in your life.

    Cute dress and looks like you had a fun date night. My hubby and I should take time to get out like that. Between ranch work and our remote location we just don’t. It is 50 miles to go to supper and a movie.

    I have been hearing the buzz about Water for Elephants. I e-mailed my librarian yesterday to see if she can get me the book.

  6. Honestly, Tina, I wonder how you get done everything you do! I’m so glad you got a night off and got to spend some quality time with Peter…you deserve it!

    And I love dinner dates with a movie, bowling, etc. thrown in. 🙂

    Tina I’m glad that you and Peter make it a priority to spend time together, have date nights, etc. I have a few friends who seem to focus 100% on their kids (which is great, but) and their marriage suffers as a result. Your partner should be #1!

    I wish I didn’t rake myself over the coals over silly things- I think it would make avoiding comfort eating a lot easier. (I’m STILL working on it- can you believe it?!)

Normally hubby and I just like to hang out (we don’t have kids at home) but the other night we went to a move, everyone was very surprised haven’t been to one in a theater in probably 10 years LOL but we went to Gold Class Cinemas where you have reclining seats, pillows, blankets and dinner while you watch the movie. I had been to one with my stepdaughter on OKC and wanted Kev to experience it here in IL. He loved it and says we need to go back already ha ha. It was a very cool date night although quite expensive.

    Now before I forget, you mentioned living in/near Atlanta. Are you familiar with the gym called Total Boxing? http://totalboxing.net/ My friend Todd runs it and I’m coming in to town in Aug. to box with him before a biz conference. Maybe we could meet up there.

    Oh and I love the dress you ended up wearing!

  13. That looks like a very nice restaurant! I totally agree that date nights are sooo important. I always say that making time for just my husband and I is so important and very needed! I honestly can’t think of a perfect date.. I always enjoy whatever we’re doing, as long as we’re together.

  14. I do enjoy dinner/movie dates. I also like some “outdoorsy” time with my husband, going canoeing, hiking, to the driving range…

    Before kids, camping was one of my favorite things to do with my husband; now it is one of my favorite things to do as a family. If you could call camping a date, anyway. 🙂

    I’m glad you and your husband got to have a night out. I think it was a win-win, because I’m sure your folks enjoyed the time with your kids too.

    I have no real solid opinion on dates just yet, although when the ocassional Daddy-Daughter Date comes up, it’s usually to a musical or a movie… And/or out to eat. Maybe that will carry over into my dating life…? Dunno. We’ll have to see!

  16. I wish I had more date nights!!!!!!!!! It seems when we plan something special someone ends up sick (usually one of the kids). My hubby and I love trying new restaurants for date nights. It makes it more fun to experience something new together and actually have a conversation over a quiet dinner 😉

    We’re going on a date night tonight! After a series of “last change” dates (aka picking up coffee on our way out of town), we decided to make a RESERVATION tonight at a local, highly rated Sushi place! I’m excited to slip on a dress and make my husband drool 🙂

    I can only imagine that your wishes are shared my all moms! Also I know that all mom’s wish they had more patience so don’t be too hard on yourself. It’s great for those of us who are going to have kids in the next few years to hear all of these!

    What a wonderful date night 🙂 The pizza looks so delicious! Our perfect date night is getting out to a new part of town and sharing lots of small plates at a BYOB and chatting the night away 🙂

  19. I need to be more creative in the kitchen too but like you, the meals I eat may seem repetitive but they are all delicious and nutritious! My perfect date night involves a nice home-made dinner. And chocolate 🙂

  21. I’m totally with you on dinner and a movie – so cliche but SO my favorite date night! Last night I got to go to a fancy tasting party that I was invited to from someone I met through the blog, and my boyfriend came with and we got to sample all the things they are putting out on the late spring/early summer menu. It was SO fun for a special date night, but obviously not something that happens very often!

    I agree that date nights are so important! We don’t have kiddos of our own yet, but until just this January we were so busy with volunteer work that we hardly had time to spend together alone. So we dropped one night of volunteering and have been spending it doing projects together around the house or just hanging out and being silly together and it has been SUCH a blessing! 🙂

  31. The only nice thing about the rarity of date nights is that it makes you appreciate them so much more. Althought it would definitely be nice — if you had them every day, it really wouldn’t be special any more!

      We even talked about that on Saturday. It definitely did feel super special even though we didn’t do anything extraordinary.

  32. Your date night sounds super fun and romantic. Love the dress choice! I find it hard to “date” when you’re living with the person you’re dating and yet not married or with children. It’s like “what’s the point? we’re always dating.” But at the same time, I want those opportunities to just hang out and dress up in a new location.

    Sounds like you had a fun date night! My favorite date nights are when we make pizza and rent a movie from RedBox…super cheap and simple, but it’s fun to stay in for a date once in awhile. 😀

  36. My dad (he’s a psychologist) always taught me the importance of putting the marriage first so even when Baby D arrives, we plan on making date nights a staple. My parents are still happy and in love over 30 years later, so I think it’s a good habit to keep 🙂

    I love date nights that are just a nice dinner in a quiet restaurant where we can just talk and not feel rushed. A lot of Atlanta restaurants are so busy that it takes away from just enjoying eachothers company.

    I like active dates – hiking, dinner & dancing, etc.

    My friend & I were actually just laughing over what we thought were the WORST first date meals – we decided sushi & ribs! 🙂 And personally, I think going to the movies is a bad first date, because you just sit quietly in the dark. Once you’ve been out a few times though, it’s so fun! (And I hate bowling, so I probably would never call a guy again if he made me bowl haha)

    The food at Via looks so awesome, seriously :). I hope you get to have more date nights too, it’s definitely a good idea to have time away from the kids. And it does not make you a bad mom at all- in fact, I think taking time for yourself and your husband probably makes you a better mom than someone who doesn’t.

    As far as the things you mentioned… I also wish laundry was self folding. But you know, you say your meals aren’t creative… well, to me those muffins were pretty creative that you made them healthier, and made them for someone else which was a really nice thing to do. And as far as the borrowed/bummed phone thing goes… hey, it beats an expensive data plan, and by recycling at least you’re using something that would otherwise be thrown away :).

    My perfect date is yummy ethnic food with my hubby and then maybe watching a movie on Netflix. I’d sorta rather do that than go out to the theatre because we can talk and stuff during the movie :).
