Hearty Father’s Day

Posted: June 20, 2011 at 9:11 am

As many of you know, yesterday marked the celebration of Father’s Day here in the US. And even though a certain someone forgot Mother’s Day last month, I still made sure to put in the effort for him on his day. After all, marriage means having to “forgive and forget” as the sage man from Taiwan told Ashley & Constantine on The Bachelor last week. Did anyone else find that conversation totally random and uncomfortable? Ah, the pleasures of trash television.

So I figured I should practice what The Bachelor preaches (where’s that sarcasm font again?) and devote some time and attention to Peter. He works hard to support our family, love and play with our children, believe in me, and put up with watching shows like The Bachelor. I guess he deserves a little special treatment. I happily obliged.

I started the traditional way by preparing a special breakfast for him. The man loves peanut butter. The man loves pancakes for breakfast. Peanut Butter Pancakes naturally made a perfect breakfast selection. And as luck would have it, we could easily adjust our standard pancake recipe to make a hearty peanut butter version.

Peanut Butter Pancakes

pbpancakes3

  • 1 1/4 cups whole wheat pastry flour
  • 1 1/2 tablespoons brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 80 grams (about 1/3 cup) natural peanut butter <—I do grams so I can just measure the pb directly into my mixing bowl. It’s easier than trying to scoop it into a measuring cup and then get it all out of the measuring cup.

Mix the dry ingredients together (flour through salt). Whisk milk and peanut butter together. Add the wet to dry and stir until combined. The batter should be thicker than traditional pancake batter because of the peanut butter. Prepare pancakes as normal by dolloping even spoonfuls onto a hot griddle or pan. Cook for around 2 minutes per side. Makes 10-12 medium sized pancakes.

The pancakes came out perfectly. I prefer a hearty, dense pancake that will fill me up and these did just that. I topped the pancakes with maple syrup and served them alongside a simple fruit mix of bananas and strawberries. The flavors went so well together and the peanut butter flavor didn’t get lost in the pancakes. I loved taking a bite of pancake with a piece of the fruit, especially banana. Mmmmm!

Besides a special prepared breakfast, I also picked up a few items for Peter that I knew he would never buy himself even though he wanted/needed them – a new wallet and a new pair of jeans.

IMGP0355

Originally, I had tried looking for tools and other man items that I have no clue what to look for in quality or price. I scratched that idea when he mentioned something a few weeks ago about needing new jeans. And then last week griped about his old wallet. Wallets and jeans I can figure out. Wood routers (????) not so much. I hate shopping for men, so I’m so thankful he gave me ideas I could handle. I’m also thankful for ideas that don’t mean the start of a new house project. 😉

Father’s Day celebrations continued with some stops to visit both of our parents. We only had time for a quick stop over to see Peter’s parents because we planned to spend as much time as we could with my family before my brother left to return to Arizona.

IMGP0366

My brother planned a special meal for my dad – large and in charge burgers on the grill.

IMGP0364 IMGP0363

Typically, I’m not a huge burger person, but sometimes they sound so good. Yesterday was one of those times. I loaded up my burger with lettuce, tomato, onion, pickles, pepperjack cheese, ketchup, and mustard. Of course, a burger is nothing without chips or fries so I had to grab a nice sized handful of the barbecue kettle chips.

IMGP0370

I think you could safely say that I ate well yesterday. Very well indeed. We can’t forget how the night finished now.

IMGP0375

I secretly picked up a 2 slice pack of Edwards Key Lime Pie for Peter and I for dessert last night. For some reason, this standard, frozen, grocery-store pie delights Peter so much. Who am I to deny him his favorite dessert on Father’s Day? I only wish I had captured the surprised and overjoyed look on his face when I brought it out to him after dinner. We both get way too excited about dessert. A Happy Father’s Day indeed. I know I didn’t mind celebrating!

  • Did you do anything special for Father’s Day?
  • Do you find it hard to shop for guys? Any good man gift ideas you have come up with before?

  1. What a great father’s day! …especially that burger. It looks delicious!

I lucked out and got to hang out with my dad in GA for father’s day, then come home and spend time with my soon-to-be baby daddy, too. It was wonderful!

  2. Shopping for men is like the hardest thing on this planet! My father is impossible no matter what holiday. If it’s not a round of golf, I seriously don’t know what the man would enjoy. So now he just gets cards 😉

  3. My husband isn’t that hard to shop for because he always wants the exact same thing. A gift certificate for a massage. Kind of a girly request, but he loves getting massages. 🙂 So this year’s Father’s Day was a deja vu of last year’s: breakfast in bed (peanut butter French toast) and a massage gift card. He loved it though. Your peanut butter pancakes look like something we’d love, too! I’ll have to bookmark this one.

I probably need to start resorting to Home Depot or Lowe’s gift cards. It would make him happy I’m sure.

  4. It’s so nice that you guys live close enough to visit both sets of a parents in the same day!! Sounds like an awesome Father’s Day and good for you for treating Peter well even though he forgot about Mother’s Day, which by everyone’s definition is a much bigger deal! =)

  5. Seems like the perfect way to spend Father’s Day!

My father lives in a Omaha so my brother and I sent him a giant Edible Arrangements (he’s on a diet). I also wrote a tribute to him on my blog and he loved it. I think it was the most special part of his day 😉

  6. Angela says:

YES! I find it so hard to shop for guys – girls are SO much easier! And for father’s day, I called my dad for a chat since he lives 16 hours away. Nothing huge, but it was great to talk!

  7. Looks like you had a nice Father’s DAy…I’m usually not in the mood for burgers either but sometimes…they just sound SO good. Those pancakes look yummy too! I love PB and I LOVE pancakes! Perfect combination!

  8. Sarah says:

Shopping for men is sooo hard. I swear every year my mom and I rack our brains thinking of something to get for him. Looks like you did well though! PB pancakes look delicious!

  9. jobo says:

those pancakes look to die for!!!! YUM!!!!! 🙂 Glad you had a wonderful time!

  10. I made Brady and Anna apple pancakes for yesterday morning! I love to buy Brady clothes because it’s nice to update him and he doesn’t like shopping! I also got him a workbench for our garage this year – which was a hit! Things that help guys stay organized are always good gifts!

  11. That sounds like such a good father’s day! I love the idea of peanut butter pancakes…drool!

  12. I spent my Father’s Day with both my dad and grandpap so it was a really nice day! Looks like you had a nice day too! I think the key lime pie had a lot to do with your nice day! Haha!

  13. It was not a great father’s day, but we ended it with some good ol’ family time while watching a movie. Looks like you guys had a great day! You can never go wrong starting it with pancakes though.

  14. Dorry says:

Looks like a perfect Father’s Day! I celebrated with my dad last weekend because I had to work yesterday. Since Billy’s father passed away, we had dinner with his mom and grandfather last night which was a lovely way to remember a great life and celebrate Grandad. 🙂

    • Tina says:

I’m glad you guys made the best of it. I can tell you both really work hard to make the most of life and value each moment. Just one of the many reasons I love you!

  15. I had a big ‘ol burger yesterday too! So good – especially because I didn’t have to cook it 🙂

I DO find shopping for guys really hard! I ended up getting my dad some nice golf shirts. I got Dan an iTunes giftcard from the kids (SO original) and then a bunch of new clothes/workout gear for his birthday (on Wed). Sometimes I feel like that’s not enough – but he seems to love it!

Glad you guys had a good Father’s Day!!

  16. Looks like Father’s Day was great! My hubby is a hard person to shop for, so this year I went to Snapfish.com and ordered him a mug with the baby’s picture all over it. He LOVED it!

  17. Unsolicited opinion: Everything about the Constantine date seemed forced and awkward. LETS ASK A SAGE FOR MARRIAGE ADVICE!!! What?

  18. I think my fiance is really hard to shop for because he is a little bit of a shopping problem and he will just buy himself whatever he wants online so there is nothing left for me to buy! My dad, on the other hand, is easy. Just buy him a book, funny movie, or anything related to golf/his vegetable garden (his two big hobbies) and he’s set.

Glad you guys had a good Father’s Day!

  19. Helen says:

Suprisingly my husband is easy to shop for, thank goodness! Your Father’s Day celebration looks wonderful 🙂

  20. i can never get my dad anything useful. he never wants anything! so i buy him a bottle of good Polish vodka and thats good enough 🙂 the rest of my “gifts” are always baking and cooking him something he loves.
yesterday the family got together and we had a great breakfast/early dinner. it was gorgeous out and a low key day, loved it! have a great week 🙂

  21. Nicole, RD says:

That burger looks gooood 🙂 I think your hubby is one lucky guy! When we have kids, my husband would want his father’s day to be spent just as your hubby’s was! And he better not forget mother’s day ever again!! 🙂

  22. Those pancakes make me swoon… I agree with that flavor combination 🙂
I surprised my dad by driving up to the Cape to see him and then spending the day with him and my stepmom. It was quite lovely
I do find it rather difficult to shop for guys! I gave my boyfriend a nice Coach wallet when he graduated college a few years ago, I thought that was a nice one and he seemed to like it

  23. What a fun celebration! I’m sure your husband loved every moment. I think my husband is easy to shop for, but my dad is impossible!

  24. how fun! Love all of the pics and your reference to the bachelorette – LOL – sage advice indeed. haha

I love shopping for Austin – he’s pretty easy though – just knowing the sizes in the brands and his pant and denim size! He won’t go so i’m glad I like it! haha

  25. KEY LIME PIE=my favorite dessert EVER! omg my favorite I love it so much!

happy fathers day to Peter!!!! he seems like the best dad and hubby and I hope he enjoyed those PB pancakes! yum yujm!!!

    • Tina says:

He really is the best. And I remember you talking about key lime pie being one of the main desserts you really enjoy. It was tasty!

  26. We spent Father’s Day watching baseball, which is right up my husband’s alley. I do find it challenging to shop for men.

I think I would LOVE your pancakes, but I might be the only one at our house. I’m the biggest peanut butter fiend around here.

Forgive and forget is good advice, even if it came from trash tv.

  27. I hear you with the burgers! It’s rare that I get a hankering for them, but when I do, I REALLY do! 🙂
