Reminiscent of Childhood

Ahhhh, the joys of blog updates and CSS coding. If you visited earlier and happened to get my lined background showing behind my text (making things very hard to read), please forgive the coding updates. Things should all be in working order now, without any random headaches or a need for “may cause seizures” warnings. Thank you for your patience!

Let’s do lunch, shall we?

One of the best parts of having a toddler to feed is having toddler inspired food. Snack plates for lunch yesterday and grilled cheese for lunch today!

Although not just any grilled cheese. I don’t really do the two plain slices of bread and floppy square piece of “cheese” thing. I need more substance (and nutritional value) to my sandwiches than that. And so does this wee one.

I made us amped up grilled cheese sandwiches using fresh bread from the grocer bakery (aka ingredients I can understand – whole wheat flour #1), slices of sharp cheddar (not fake squares of congealed “cheese”), thick tomato slices, and a hefty spread of hummus.

Not your typical grilled cheese, because it’s even better! Simple and satisfying. Just like childhood. Smile 

My recent food choices aren’t the only things reminiscent of childhood. On the way to our family gathering for Labor Day this weekend, we had to drive through a small town, country area that had house after house after house on land with pastures full of cows, horses, and the occasional chickens. It quickly sent me back to childhood.

When growing up, I used to regularly go horseback riding when visiting my grandparents in the North Georgia Mountains and would always dream of growing up and having my own stable with horses. I would live in a large estate and get to ride my horses every day.

I remember whenever we would drive up to my grandparent’s house we would pass by similar places and I would easily spend the hour car ride daydreaming of the day I could live in such a place. Clearly this was before I understood that pesky little thing called money. But it was always so fun to daydream! And I found myself doing the same looking at all the land with horses on the way to my sister-in-law’s house on Sunday.

It’s funny how our dreams change, huh? Now I don’t aimlessly daydream about such things. Instead I dream big on trusting that God has a plan for me and going after my passions. I dream about being a good mother to my children and having a strong family unit in our many years to come. Still mighty good dreams to have, but it sure was fun going back to that childhood innocence of dreaming looking at all the horses. Although now I know I wouldn’t want to own horses. I have enough trouble as it is trying to get my dog to love me!

  1. I used to day dream about having no one to tell me no when I wanted new clothes. Clearly I didn’t understand the concept of having a husband. HA!

    Peanut butter & jelly was a childhood favorite and still is. 🙂

    What an awesome looking sandwich! I remember those days…dreaming of everything and anything. Then money came along. Regardless, sometimes it is nice to sill dream and I can’t wait to have kids to see their eyes light up. It’s magical. Your daughter is too cute for words 🙂

    I used to dream of living in the time period of Samantha from American Girl. I would even have vivid dreams of living in her Victorian style home. Hopefully someday I can feel that way in my future home. God is good 🙂

      I loved Samantha from American Girl too!!!! Although I am dreading the day M gets hooked on those dolls. They are dang $$$$. LOL

    As a kid I used to LOVE instant ramen noodles…it would be a weekly treat that my mom would let us have! I still love noodle soup although now it involves soba noodles, a heap load of veg, and some kinda protein! Still as delicious though!

    My daydream- that I would live in a big city and work in a big office and carry a briefcase. I kind of do that! I have a big cube and do carry a laptop bag 😉

    Grilled cheese and tomato soup is still a favorite!

    when i was little, i love love love lasagna. it’s not really a kid food, but it was my favorite and is still definitely up there on my list!

    I used to daydream about being rich and having a huge house…and a huge beach house…and a huge ski lodge. Clearly, I have a thing for large expensive properties! 😉

    I didn’t even realize you had a dog! One of the dogs I’m dogsitting right now is named Roxy too! (picture of her in my last post). She belongs to my husband’s ex-wife (as in 30 years ago ex) aka my husband’s daughter’s mom aka one of our best friends, so she’s quite a constant in our lives.

  10. Mmmm…I love the way hummus tastes on warm & toasty bread!

    Whenever I needed some major cheering up, my mom would put food coloring in a teeny tiny bowl of frosting and encourage me in my dreams of being a popstar.

    Clearly, I’m not a popstar…and I’m okay with that 🙂

  12. Sound cliche, but I always dreamed of being a mother. And now I am one. Sure I went ahead and got my B.S. at Carolina and sure, I love doing some things out of the home, but I LOVE being a mommy. It’s all I ever wanted.

    I have always been a daydreamer (it’s a guilty pleasure) and as a kid I used to always think about moving to a big city, having a big social circle, and traveling for work all the time. Coming from a tiny town (700 people tops) in the middle of nowhere, that was fine. But now I would hate that life!

  16. Oh mannn I have the hardest time with CSS type stuff–actually, I don’t even know anything about using it! 😛

    Wowww that is a beautiful place!! And I used to daydream a lot about living in Africa….it was somewhere I wanted to help at, to live at, and a place where I could make a difference. haha, I know it sounds weird, but I was quite “deep” as a child! It’s totally God though 😀 And I loved anything that has to do with dulce de leche!! It was normally a spread for crackers/toast along with tea+milk everyday after school.

    And Roxy will love you someday! Maybe she does, she just doesn’t know how to express it? Have a beautiful day!!

    OMG that grilled cheese looks amazing! Never thought to toss some hummus in the mix, I am totally stealing that for lunch on Thursday when I’m home for work and have access to all the stuff I’d need to make this lunch. YUM!! That totally brings me back to childhood – especially when paired with tomato soup, yum.

    Food that I still love and adore from my childhood is PB&J. Natural crunchy peanut butter with strawberry jam on wheat bread=perfection.

My mom used to make up big plates of random things like bugs on a log (celery w/pb and raisins), carrot sticks, grapes, cheese cubes, healthy crackers, whatever she could really find in the cupboard/fridge and call them ‘Party Plates’. When we were young my brother and I thought it was soo cool and really special to be having a ‘party’ with dinner LOL

  23. PB & J is still one of my favorites! When I was little I wanted to own like a millions dogs…one from every breed. Haha, I still feel like a crazy dog lady, but it’s definitely calmed down a bunch 😉

    I used to ask my parents if we could keep a horse in our backyard (it was big) and fantasize about riding the horse to school. My Mom finally pulled out the houses original deed from 1910 and showed me that it said a stable wasn’t allowed!!

  25. I had grilled cheese for lunch today too!! Win! Although nothing healtheir about mine, tomatoes are a great addiditon.

    My mom used to make these sandwhiches for me in school, white bread, tomato slices, mayo and pepper (so much pepper). I wouldn’t eat them and left them in my cubby until the teacher found them all and called my house to tell my mom I wasn’t eating lunch. They were gross!

    So my friend had a dog named Roxy and looked almost the same as your pup! Cute!

    It has to be my favourite evening treat of cheese on toast made in a cheese toastie maker. Yum yum. Just using two slices of bread and lots of cheese! It would come out of the griddle absolutely roasting hot but I never learned to let it cool and always had to have a bite as soon as it was done. Nothing burns like hot melted cheese and the escaping steam from from inside the sandwich 😉

  27. I don’t think I even realized you had a dog! You never show her! My childhood dream involved horses too b/c my grandfather had 4 of them at their house but I was (and still am) like deathly allergic to horses so while all my cousins got to ride them every Sunday at grandma & grandpa’s I got to sit inside alone 🙁
    And speaking of that “congealed” cheese. I just (like last week) threw out a package of Kraft singles that had been in my fridge since we moved in (2.5 years ago). They still looked the exact same. How scary is that!?

    Yes, it is funny how our dreams change! And that grilled cheese looks GOO-OD! Hmmm…I still love sugary cereal (as a snack/treat…that stuff would never satisfy me for breakfast)…childhood dream (that I’m still holding on to)…being a mommy, having a husband and a family.

    I used to dream about having my own tv show – or being a correspondent for Oprah or Sesame street when I was younger. I used to practice segments into the bathroom mirror!

    Your grilled cheese looks phenomenal. That might be my dinner tomorrow!

      haha! Yep. She runs from the camera though and seriously avoids us with the exception of walks. It makes me sad. Still love her though.

    My dreams as a child are still my dreams as an adult. All I ever dreamed and dream now is that the Lord will bless me with a husband that loves Jesus more than he loves me, and with lots (4 now, but it was 10 as a child) children. When asked what I wanted to be when I was in childrens chirch @ 10yrs old I said “a mommy”. That’s one of the reasons I love,love,love, your blog. We have so much in ommon. I struggled with healthy eating in college (and still stuggle at times), weboth love fitness(i ran xc in college and still run ALOT), and we both love our family and Jesus!! However, I just don’t have my own family yet. I’m trying to trust Gods will and timing but I get done sometimes. I teach 1st grade and so I stay busy with that. But…I want a classroom of kids tat are truly my own. 🙂
