Posted: February 10, 2010 at 1:46 amWell, first off I want to give a shout out to my girls Krys, Mandy, and Stacia!! These are three close girlfriends of mine from my old online home (a fitness site) and I am so happy that they have found their way to my blog. Don't worry - none of them are the watermelon dress friend ๐ And I honestly don't diss on her color choice and do think it can be pretty with her wedding plan...I just don't think it will be a friendly color to a watermelon belly. But, then again, NO bridesmaid dress is going to be! ๐
But moving on. Today I am actually going to post about FOOD! Now, you may notice that I do not post my meals every day and sometimes not even a single mention of a meal for a week. The reason why I don't do this is because feeling the need to document everything I eat with a photo is unnecessary and detrimental to me. Some people enjoy it, but I can get way too caught up in it too fast. I prefer to eat what I enjoy as long as it is all part of a healthy, balanced, moderate diet. I have spent way too much time analyzing everything I eat and allowing it to put me back into a bad relationship with food, so documenting it all is not good for me. I'm at a good place with my lifestyle and plan to stay that way. Plus, I prefer my blog to reflect the many aspects of who I am, not simply what I do in the kitchen. And I only get about 10 minutes to eat at any given time with a one year old at my feet, checking me out like this:
I will, however, post reviews of things I tried and enjoyed and recipes I experiment with. Today I decided to go for a yummy sounding recipe that the awesome Danica posted on her blog last week. Kung Pao Chicken. It sounded and looked oh so good. And it uses the appliance for people who don't cookย crock pot! Perfecto! Or however you would say that in Chinese. Anyhoo...it went like this...
Cut up 1 lb chicken breasts into chunks and place in slow cooker.
Mix together hoisin sauce, soy sauce, cooking sherry, ketchup, ginger, red pepper flakes, hot sauce.
Pour over and coat chicken in slow cooker. Cook on low 6 hours. Gotta love being able to go shopping for a few new workout clothes, play, read a book, and go to the gym while dinner is cooking ๐ I hit up TJMaxx and picked up a few workout tops and two sets of capris, all for $60!
So, I got to look cute while doing the following workout:
- 10 min elliptical warmup = 1.14 miles
- walking lunge + db pullover
- wide stance bb squat + incline bb bench press
- upright bb row + bb bicep curl
- 20 min treadmill = 4.0 speed, 5.0-7.5 incline
Back to the recipe. About 45 mins before serving, chop up your choice veggies.
Mix water and cornstarch.ย Throw in the water/cornstarch mixture and veggies for the final 30 minutes of cook time. Let simmer and get thick and yummy.
The TASTE of this was really good....but I was even able to screw this one up. I cooked it too long and the chicken was too dry. So, if you keep an eye on your cooking times I know it would be awesome! You can find the full recipe HERE.
To make up for the lackluster meal, my sister and I have been getting in some quality goofy time.
We decided to sort through some boxes of old books my parents brought over to salvage any that might suit Makenzie. It was very nostalgic. Can you tell I was an 80's baby by my elementary school reading?
And we found this old joke book for children. Holy cow!!! There must have been a lot less of filtering what kids say and protecting kids back in our time. Here are some of the jokes we found while reading and laughing hysterically...
Nice, huh? Quality stuff for us kiddos! Another good one was "You're just like scrambled eggs! -- Why? -- Because you get beaten often!" WOW! At least it provided some good laughs to think that we used to be entertained by this when we were under the age of 10. ๐
Okay, time to watch The Biggest Loser! Have a great night!
- Anyone else still watching The Biggest Loser out there? I still enjoy the show, but I really wish that the producers would stop trying to get the oldest and biggest contestants. I much preferred when the contestants needed to improve their health and lose weight, but I could SEE the results throughout the show by visible increased fitness and health and better body composition through the show. I understand the larger contestants are in need of the help, but I don't think how strenuous the expectations of the show are is suitable to them. It's not as enjoyable to see contestants who aren't really able to do anything and at the end of the season still have such a long way to go. They either need to extend the length of time contestants are at the ranch, or not have it be the biggest people they can find.
- Do you blog ALL of your meals? Just some of your meals? Or very rarely focus on your meals like I do? If you do blog your meals most of the time, does it ever wear you out or cause any negative thoughts/feelings/stress on your approach to food or what you're eating? Do you ever feel guilty for eating something or not eating something?
- What's a childhood joke you remember? Or what things were you into as a child?

I enjoy blogging about some of the food I eat, maybe some recipes I’ve enjoyed…but throwing in other tid-bits about my/our life is fun too! It would WAY stress me out to blog every single thing I ate! Aren’t new workout clothes the best!? They make you want to break them in immediately :>

To be honest, I lose interest in blogs that are showcasing a day’s intake…every day. I listen to that for a living, I don’t want to do during my leisure time. New recipes with awesome pictures, however…score!

I don’t blog everything I eat. I think it’s boring. Plus, I don’t want to read what other people eat every second of the day! I much prefer to check out good recipes, and get the scoop on who people are.
I don’t blog my meals every day, simply because most of them are boring! If I have a particularly interesting day of eats, then my meals will make the cut. Usually, I do take pictures of all my main meals though. It’s insurance in case all else fails, and my post must contain my eats due to lack of other topics floating in my brain.

I really have been exploring the blog world a lot more, and I find it so strange that SO many girls are so hyper-focused on eating, taking pictures and just their whole world revolves around food. Like an ED of the times, kwim? Not to mention the last 4 blogs I checked they eat almost the same strange odd concoctions. I dunno, maybe they just don’t see how non-normal that is and how it could be a very disordered thing. Do you think they will do that forever? I also think it is unhealthy at some level.
I usually only blog when I make a dif recipe or if it is an amazing eat that I crave afterword! Love the pics of the lil one ๐
My blog is all over the place; I don’t blog all my meals. I usually feature something that I enjoyed cooking and that turned out great. The reason behind it is to inspire others and share some cool recipes.
When I was a kid, I was a trouble. ๐ I got into some many tricky situations mainly due to my tom boy nature. Being stuck on the top of a roof is one of them. ๐
I don’t blog all of my meals, mostly because I don’t think they are very interesting! I eat pretty much the same thing for breakfast and lunch every day. But my blog is about food, so I like to document my dinners and any other experiments. Plus, I would probably end up forgetting to take pictures all the time!
I’ve been using wordpress for about two weeks and I love it better than Blogger. I love your new site too. I got away from blogging for awhile, just needed a break. Come over to mine sometime!

No blogging meals for me! Actually, no blogging at all! I feel more “Me” now without having to post up everything about myself, in particular food. It’s such a small part of who I am…but I still enjoy reading what you are up to! ๐ Great finds at TJs! I just hit that store up a couple weeks ago, I love it!

I sometimes feel guilty over food choices, but not often and I never dwell on it for too long. I am happy to say that for the most part, I have a good relationship with food. I love to eat in a heatlhy way, but I ain’t no fool. I have a sweet tooth and a hankering for fatty foods at times. MOderation is the key. I consider myself an amateur athlete–I eat for fuel. I like to compete and I like to do it well! I also have kids that see what I do..and they do what I do. I owe it to them to not be a crazy dieter or junk food junkie! ๐

i blog 90% of my meals..if i go out to eat or eat at someone elses house I usually dont picture it but i usually mention it.

Just found your blog. I agree with the Biggest Loser. I don’t watch it consistently any longer b/c it’s just getting out of hand in my opinion.
I typically only blog about my dinner. If I happen to have a day off in the week or eat something particularly good for breakfast or lunch on the weekend, then I’ll post that, but mostly dinner recipes. I don’t have time to post everything!
My dad got my sister and I a book of knock-knock jokes when we were kids (I’m sure he quickly regretted that move) and I still remember some of them. LOL
Awesome job on the Kung Pao Chicken w/o using your crockpot ๐ You could coat it in corn starch and “fry” it in a little oil to help it stay moister as it cooks.
I am totally with you on your Biggest Loser Thoughts – I wish they would stay longer, but, that probably wouldn’t work with their show.
P.S. Sorry that I am just now seeing this one too – I am obviously completely behind on catching up ๐
