Not Your Typical Thursday

I wanted to first say thank you again for your continued support of the Stuffed With Emptiness series. It’s a tough one to write (especially today’s), but it always feels so worth it once it’s out there and I hear your response. Thank you.

Today started out like any other Thursday. I woke up early and wrote my morning blog post. I ate a banana. I went to the gym and ran four miles on the treadmill. I came home and ate more (surprise surprise) pumpkin oats for breakfast.

Things continued in typical fashion through lunch time. You know what Thursday means – family lunch day with Peter at the park!

Today Peter’s work served up the typical sandwich and chips fare.

I picked a sandwich that had a sort of peppered turkey, ham, and pepperoni with pepperjack cheese, then added some tomato, lettuce, and dijon mustard.

Peter also grabbed two bags of my favorite chip flavors for us to share. Cheddar Sun Chips and traditional Salt ‘N Vinegar.

May not have been as good a meal as last week, but the food isn’t the most important part. I will happily eat a sub-par meal in exchange for some family time and our little tradition. Smile

Although, you do all know how if a meal doesn’t satisfy me fully I get a little hankering going on a bit later into the day. This means my Thursday afternoon snack called for something a little different. Something a little more exciting.

I brought home a cookie that came with lunch and felt like having a cozy little treat. Out of nowhere I got struck with an idea that I knew I needed to satisfy.

Pumpkin hot chocolate. Pumpkin hot chocolate. Pumpkin hot chocolate.

And at that moment, today earned the title of “Not Your Typical Thursday”.

To make the pumpkin hot chocolate I simply whisked together the following ingredients in a small saucepan over medium heat.

  • 1 1/2 cups unsweetened vanilla almond milk
  • 1/3 cup canned pumpkin
  • 1 tablespoon unsweetened cocoa powder
  • 1/4 – 1/2 teaspoon pumpkin pie spice (to taste)

Then I sweetened it up with a bit of Nunaturals stevia drops. I wish I had some whipped cream! It would have taken this already good mix to a whole new level.

If you like pumpkin and chocolate, you must make this!

I think I’m feeling another cup for dessert tonight. But first – dinner! Time to eat! I will see you in the morning with a fun post. Smile

  5. Grocery shopping! I ran around – well had the drivers take me around – and hot all 3 stores to get what I needed… Success! Im starting to like the hunt to find things…it almost makes the recipe taste better when you get all the ingredients you’re looking for…funny how life works that way!

    I’m not typically a chip person, but after a long run, I do crave them. I think it mostly has to do with the salty component and how much I sweat out! Instead I like nuts or crackers like Wheat Thins.

  9. I’m actually not a huge chips fan in general, but I definitely DO enjoy Sun Chips! Pretty much all the different flavors of Sun Chips I love – they’re so addicting. If I am craving salty (which is rare…usually I crave sweet), I usually turn to pretzels or Sun Chips.

    Pumpkin hot chocolate?! Genius!! Looks so simple and delicious too!

  10. Chips–I can usually take them or leave them. When I’m in the mood, though, I like Kettle brand’s sea salt and cracked pepper or sea salt and vinegar.
    A typical Thursday for me is taking Meghan to gymnastics AND library story time. Of course they have to be on the same day.

  11. I try to stay away from chips but I love the Miss Vickies jalepeno chips and all Zapps flavors. I also love tortilla chips and salsa!

    I am going to make a night cap of pumpkin hot chocolate.

  15. Was the peppered turkey turkey pastrami? I LOVE turkey pastrami – so good!

    My favorite kind of chips are the really salty potato chips – like lays or the thick-cut extra salty kettle-cooked ones. Love them.

  16. Most of the time I enjoy something sweet rather than something salty, and I can’t even think of what kind of chips I like right now! I could think of a million different sweet treats though of course : )
    The only thing I do every Thursday is watch The Office at night–it’s just some great, innocent humor that I look forward to each Thursday.

  17. I’m so jealous of your hot cocoa – it’s still 87 here in Central Florida! Is it too much for a girl to get just a touch of fall? I’m in shorts and tank and furry slipper boots. Trying to channel my inner cool breeze! 🙂

    With crisps I can take them or leave them but you know what is amazing…crisp sandwiches! LOVE the added crunch! A typical Thursday for me involves washing my hair after work..yes I have a hairwashing schedule- no shame ;)!

    Sounds like you recovered well from the sub-par lunch! I bet that would be great with carob too, for those of us who shouldn’t do chocolate…

  20. I really love Tyrrell’s English Crisps! Especially the sea salt potato crisps and the veggie crisps. No MSG, gluten-free, vegan, and delicious!
    The best part of my typical Thursday is my Pilates class! Core workout + relaxation = happy Sue 😉

  21. That hot cocoa would have been perfect with the pumpkin spice marshmallows I saw at the store the other day! I have been looking for those bagels to and can’t find them. My store did have some pumpkin spice swirl bread (I think it’s Pepperidge Farm), but it wasn’t as exciting as the bagel idea.
