Addicted

Catching up from the weekend?

I have to get something off my chest. I have an addiction problem. I’m addicted to Groupons. Whenever I get an email for a Groupon that includes a deal for a restaurant with an appetizing menu within a 30 mile radius, I hit “Buy Now”. I love getting to try out new places to eat that I otherwise may have never heard about or been wary to pay full price for a test-drive run. Unfortunately, when this addiction couples itself with my forgetfulness we have another problem.

When I flipped my calendar to April, I noticed that we had not one, but TWO Groupon deals expiring this weekend. Oops! Thankfully we had Saturday open to do a lot of eating. I didn’t mind. Big surprise, right? 😉

One of the spots had a perfect menu for a light lunch, so that’s exactly what we did. Cafe Lapin is a small cafe tucked away in the Buckhead area. It doesn’t look like much at all, but they had a nice sounding menu. I ordered an apricot chicken salad sandwich with the mixed greens salad.

The sandwich tasted a little weird and wasn’t my favorite, but the salad with its balsamic, dried cranberries, and sunflower seeds worked quite well. I left satisfied. After all, to cash in our entire Groupon we had some money to spare on a little dessert. I ordered an Oatmeal Dark Chocolate Cherry Toffee cookie.

A mouthful of a name for a cookie…and a mouthful of yum for flavor. I also admit to having an addiction to sweets. I own it and figure there could be worse things. Like, you know, not loving sweets. I would classify that as catastrophic.

In between our dining, we hung out with Peter’s family at his parents’ house to let our appetites get going again. Awhile later, it was time for dinner at The Fickle Pickle.

The Fickle Pickle is a really cute little restaurant in an old renovated house. I love the charm and vibe of places like this. I also love when the food lives up to the atmosphere. It most certainly did here.

For my dinner, I ordered a BLT sandwich that had bacon, arugala, tomato, BRIE cheese, and a basil spread on sourdough bread pressed panini style. The fries left a bit to be desired, but the sandwich…perfect. I know a certain somebody would agree.

We hightailed it out of there after eating because the kiddos were getting tired. After getting them to bed, we settled in for the evening with the movie 127 Hours. I really liked it. It kind of amazes me how a movie without much happening can capture my attention so well. Although, I did not stay attentive during the whole amputation scene. No thank you. Overall, I would recommend it though.

The rest of the weekend remained rather low-key. We stayed home from church because little B seemed sick. I went for a 5 mile run with Lee from In My Tummy. It was nice to run with a friend because we helped keep each other going and chatted off and on. She also helped me reach a new distance – 1st time hitting 5 miles! Wee! After the run, I spent the rest of the day napping and snuggling a sick kiddo. All in all a good weekend since B seems to be getting better. I hope yours was too! 🙂

Joke, No Joke

I don’t do April Fools. I think my father tainted it for me the year he set all the clocks wrong and woke us up to run around the house getting ready for school at 2 am. I assure you there will be no April Fool’s pranks in this post. Instead, I will happily recap my day and the joke or no joke moments that ensued.

Upon arriving to spin, our instructor informed us she planned an easy ride for the day. Joke. She promptly informed us that was her April Fools on us and then laughed an evil laugh. Needless to say, I left class drenched in sweat. No Joke.

Isn’t it spring? Joke, apparently. The weather this morning still had quite the chill to it. However, that didn’t stop me from satisfying my cravings for a yogurt bowl for breakfast.

I coupled a container of pineapple Chobani yogurt with strawberries, coconut, and a couple of large handfuls of Cheerios. It was tasty. No joke.

After breakfast, I took a long and peaceful hot shower. Joke. I have two kids hanging with me remember? Within two minutes of hopping in I had Braedon fussing for some random reason and Makenzie telling him to “Stop it! I reading, BraeDON!” There was absolutely nothing peaceful about that shower. And keeping your eye on two kids while scrubbing with soap will inevitably leave your eyes stinging. It all turned out okay, though. I did finally get myself dressed in “real” clothes after my shower for the first time in almost a week. No joke. It felt so good to break out of the yoga pants rut!

My breakfast held me over for a long time. Joke. I knew I needed more fat in the meal to fill my belly! I was ready for lunch just a short 2ish hours later, so I whipped up a very satisfying meal.

I cooked some mushrooms and spinach together, scrambled an  egg, and tossed it all together with some goat cheese in a wrap. I had an apple and some carrots with hummus to round out the meal. Actually, my spoonful of peanut butter afterwards rounded out the meal. Peanut butter makes an excellent post-lunch dessert. No joke.

I think I am finally over my goat cheese kick. Joke. Who are you kidding?! I just can’t stop. Which is why I made meatballs with the good stuff and wonder when I can make more. Clearly, I’m obsessed. No joke.

Spinach & Goat Cheese Meatballs

  • 1 lb lean ground beef (LOVING our cow share for this meat!)
  • 4 oz crumbled goat cheese
  • 2 large handfuls fresh spinach, chopped/shredded/torn apart
  • 1/2 red onion, diced
  • 1/4 cup bread crumbs
  • 1 egg

Combine all ingredients in a large bowl.

Mix well with your hands. Roll into 2” meatballs and place on a cooking sheet sprayed with cooking spray. Should give you anywhere between 12-16 meatballs. Bake in a 350 degree oven for 20-25 minutes, until cooked through.

Et’ voila! A perfect little meal in no time at all.

Now, it’s 8 pm on Friday night and I’m ready to climb into bed. You may think I’m joking, but I promise that is no joke at all.
