Riding The Weekend High
Posted: April 11, 2011 at 7:56 amWhile Monday’s arrival is typically a bummer, I had such a great weekend I find myself still riding the high from such a great one. Likely a sugar high, but still. Saturday started off amazing with that accidental 6.3 mile run and a great lunch with blog friend, Laura. I continued a good time Saturday afternoon with lots of kitchen time. I whipped up a few goodies to bring to a pot luck afternoon we had planned with friends.
Jess’ Triple Layer Cookies & Cream Bars
My Favorite Cheesy Mexican Cornbread (recipe below)
Our afternoon and evening contained the simple joy of spending time with many of our best friends. I do not find anything nicer than an evening spent laughing and chatting with friends, watching our children enjoy the excitement of youth, nibbling some good eats, and celebrating the wonderful fellowship we have thanks to God bringing us all together.
I love these people! I also loved the food.
I had taste-tested a couple pieces of each of my recipes before leaving, so I didn’t have the hugest appetite for our early dinner. I kept it simple with a serving of spinach salad, two deviled eggs (with bacon & blue cheese!), a spoonful of mac & cheese, and some fruit. Saving room for one more of Jess’ bars clearly mattered most. I think everyone else had the same thing in mind. Those suckers were G-O-N-E! Well done, Jess. Well done.
Our busy weekend extended into Sunday with church and a 3rd birthday celebration for one of Makenzie’s friends. The party was held at an indoor soccer sports center. Little M started off a bit unsure about everything but quickly got more excited about the festivities.
I spent a large part of the party hanging out with my special date. What a handsome guy!
Since the party started directly after church, I had quite the hunger beast setting in. I had no problem downing some mediocre pizza.
It’s funny because this brand of pizza used to be my favorite. Then, my Italian hubby turned me into a pizza snob. I never thought that day would come. I know for a fact you will never find me snobby over cake. As long as it has icing, of course.
This cake rocked! Normally I can take or leave the cake portion and only desire the icing. This cake was perfect and not dry in the least.
We ended the weekend with some Love and Other Drugs action.
Finally, here is that recipe I promised!
Easy Cheesy Mexican Cornbread
- 1 cup cornmeal
- 1/2 cup all purpose flour
- 1.5 teaspoons baking powder
- 1 cup shredded cheddar or monterey jack cheese (I used a mix of the two)
- 1/2 medium yellow onion, diced
- 4 oz can diced green chilies
- 1 can creamed corn
- 2 eggs, lightly beaten
- 1/3 cup vegetable oil
- 1/4 cup milk
Preheat oven to 375. Combine the first 6 ingredients (cornmeal through chilies). Add the wet ingredients (creamed corn through milk) and stir to mix well. Pour into a lightly greased 8x8 square or 9” round baking dish. Bake for 40-45 minutes until top golden brown and a toothpick comes out clean.
- Do you like pot luck dinners? What do you like to bring?
- Check out ! Great prizes!

Look at B!! he is going so big!! So cute too. 🙂
And we watched that movie this past weekend too. I l really like it..although.Jerry said he will never look at Ann Hathaway the same again! haha!
Haha! Yep. There’s her breast. Oh. There it is again. And again.
All I have to say is at least there was some Jake Gyllenhal butt action for me and you! 😉
I’m so happy you had an awesome fun-filled weekend!!!
I ABSOLUTELY adore the picture of you and B!!! Aweeeee 🙂
I can’t believe how quickly baby B is growing! Sounds like an absolutely perfect weekend!!
Don’t you love when weekend happiness carries over into the week?? I’m feeling pretty good this morning myself, and I think it has to do with the fact that it was so warm this morning I wore my shorts to the gym with NO sweats on top!!
I love potluck dinners! I usually bring some sort of vegetarian-friendly grain and veggie based salad – often with beans in it so that there is a source of protein. That way, it’s suitable for someone to eat as a main meal if they had to because it covers all the bases – a little fat, carbs, and protein.
Glad you had a fun weekend, Tina! I usually bring some sort of dessert or cream cheese rolls to pot lucks. Have a great Monday 🙂
I always do desserts. Mainly because I always have a running list of ones I want to make!
sounds like an awesome weekend!! you look great btw!!
What a great weekend! No wonder you’re still riding the high! Pot lucks are kind of hit or miss with our group of friends. I love baking so I usually sign up for a dessert, but I’ll typically bring something healthy too so that I know there is something there with nutritional value!
B is getting so big! I love potlucks, I always offer to bring dessert.
Such a great weekend 🙂 Can’t beat time with friends & family. The Easy Cheesy Mexican Cornbread looks FABULOUS! I am a little bit of a cornbread fanatic. The parties look like fun too 🙂 I do enjoy pot lucks- I like to switch up what I bring, but most request I bring dessert 😉
What I love about this cornbread recipe is it doesnt come out dry at all. I love cornbread but don’t like it too crumby.
1–How’d do you like Love and Other Drugs? I really want to see it.
2–B is getting SO cute. Not that he wasnt ever not cute, but he is really starting to look like a little person. 🙂
I really liked it. It was a good movie. Do be warned that there is a lot of nudity!
Weekends spent with lots of family and friend time are the best. You guys look like you had a great time, and I can’t believe how big baby B is getting! Cheesey cornbread sounds delicious, and you definitely can’t go wrong with Jessica’s recipes for dessert.
That picture of you and B is perfect. I love it.
If you’re a food snob you have to come to Windsor ON some time. Not to toot my town’s horn but we have some pretty amazing pizza culture here.
I forgot to comment about your run…awesome!! When is your race again?? You will rock it…and then a 10k! 😉
Love potlucks! I will make salsa or another dip..usually black bean. They are pretty good if I do say so myself!
You look great in the pictures Tina!
THIS WEEKEND!!! I’m so excited. And yes – I already want to find a 10K race to sign up for.
I am so glad the bars were a hit! 🙂
I like potlucks — usually I bring a salad or fruit, only because there never seems to be enough of that stuff. I’m not a fan of pasta salads/potato salads and there seems to be an abundance of those at potlucks I go to.
Those bars look amazing and so does the cornbread!
Did you like that movie?
I really did like the movie. There was a lot of nudity though.
And I’m so thankful we always have people that bring delicious and healthy side items.
I’m pretty sure my belly is going to thank you for that recipe.
You are looking FAB pretty lady!!!
I love, love, love that picture of you and B. Absolutely beautiful!!!
Yes, I love potlucks!! I usually bring some type of salad or another vegetable side dish. I like to spread the veggie love. 🙂
Baby B. is getting so big!
What a fun little party – looks like a great turn out too – love all of those cute kiddo pics. I love potlucks too – I usually bring a dessert, like snickers pie!
I want to come to one of your potlucks. Snickers pie sounds fabulous!
What a fabulous weekend! I love potluck dinners because of the smorgishbord of food. My favorite thing to bring to a potluck is an ambrosial fruit salad or a couscous salad
I am making this cornbread asap…you had me at cheesy!
Hope you like it! I love that it’s not too dry. And cheesy. That’s always good too.
Sounds like a great weekend Tina! B is getting so big! I love pot lucks because we get to hang out with friends, but I don’t really focus on the food so much at them since there normally isn’t much I can eat. I normally bring hummus/veggie platters or dessert.
Your little guy is so precious. I love potlucks. I like to bring napkins. (I kid, I kid) I usually bring a veggie of some sort.
Looks like a great weekend! How did you like the movie?
Philip has made me a pizza snob as well….papa johns use to be my favorite now it doesn’t even taste like pizza….sad! I can’t wait to watch that movie…I hope it was good…it has two of my favorite “new” actors in it. one of these days we will have to try and working out together….
Those guys and their pizza. LOL
And I really liked the movie a lot. Great story line. Deeper and funnier than a regular chick flick type movie. Although there was a LOT of nudity. Prepare to see lots of Anne Hathaway’s tatas.
your little guy is just precious! (and handsome of course) 😉
looks like the bars turned out great!
What a great weekend! I love that picture of you and Baby B. You looked gorgeous!!
Sounds like an awesome weekend!! I love doing potlucks. My girlfriends and I do them from time to time and its always a highlight of the week for me!
Oh, my gosh! Your little boy is so handsome!
I used to lvoe playing with those parachute things in PE as a kid! good times!
I know. I loved those things! I was actually pretty excited when they pulled it out. LOL
Sounds like a great party!
How’d you like the movie?
What an awesome weekend! You look GORGEOUS! You’re glowing in that picture with Baby B, and he is so handsome. This post made me smile! I love pot luck dinners. I usually like to bring an appetizer or a side dish.
The great thing about pizza, though, is even when it’s bad, it’s pretty good 🙂
SO true! LOL
What a great weekend!!!! Pot luck dinners make me happy – and I always bring dessert. 🙂
I’m going to try that corn bread recipe – we are a family of corn bread lovers!!
Omg… your little man is getting so big!
What a great weekend! 😀
Oh my goodness, B is getting SO big! He really looks like you!
Yummy! I cannot wait to try your cornbread recipe – it looks fabulous and it would be a perfect side to pair with a large salad for dinner tonight.
I think the gorgeous weather resulted in a great weekend for everyone!!
You are looking radiant!
Thanks for sharing the cornbread recipe–might have to try that on my husband at some point.
I love potlucks, and always bring a big salad and often roasted veggies, and sometimes one of my desserts…
love
Ela
Thanks, Ela! I feel great and glad it shows. 🙂
Hope your husband likes the cornbread if he gets the chance to try it!
Potlucks are awesome for those who like to cook… great excuse to try out some more decadent dishes without having to worry about leftovers! 🙂 LOL!
That is EXACTLY what I love about them. Ha!
Ohhhh I LOVE deviled eggs!! Your little boy has grown up so much, he’s adorable 🙂 Glad you had a great weekend. I love when my entire family gets together and just watching my younger cousins play with one another. They’re the cutest 😉
Looks like a perfect weekend! Little B is getting SO big!!! He’s adorable 🙂
Oh my gosh- your little man has gotten so big! He’s adorable! Three months old, right?
How did you like Love and Other Drugs? I’ve been dying to see that!
Yep! 3 months old today in fact. 🙂
And I really liked the movie. I thought it was better than I expected it to be.
What a fun weekend! We just got Love and Other Drugs in the mail from Netflix! I hope it’s good, thats on the agenda tonight for me! I’ll have to add this to my recipe book, it looks delish!
I am envious of your great weather! That cornbread looks incredible. Your little man is getting BIG!
aww what a cute and sweet weekend!~ I usually love bringing baked goodies or casseroles 😀
I saw that cornbread and got super excited that you promised a recipe, then I forgot about it with all the cute baby/kid pics…then I got excited all over again-looks delish!
